🍐IT’S POACHED PEAR SEASON!!!🍐
Is it actually poached pear season though? Is it ever poached pear season? Is it ever NOT poached pear season? Anybody know? Help?
Anyways, these are just beautiful (and delicious). Poached pears in red wine for 12 hours+ filled with a mascarpone-cream cheese vanilla mousse with a hint of cappuccino, complemented by candied kumquats (and other citrus fruit) and candied hazelnut spears ... that’s a mouthful 😴 Of course there is a vegan alternative, the only non-vegan component is the vanilla-cappuccino mousse which could easily be replaced by a tofu-based mousse (tofu mousse? Sounds kinda gross, eh? But trust me it’s a thing and it’s better than you’d think).

🍁Jean Talon Market at the end of October!!🍁🍂
Although the market’s open year-round, the open air market is closing soon to give way to the indoor market for the winter❄️ - the walls are already starting to be put up!
The Jean Talon Market is one of the biggest public markets in North America 🤭😯 Definitely worth a visit, and I’ll definitely be making more regular trips in the future to discover everything this gem has to offer 🌱✨

🍂🍂I think it’s time to finally accept it.. Fall is here to stay
☁️☁️So as I’m dealing with the cold mornings🌬, the rainy days🌧, the - Actually let me stop there ‘cause I could go on and on. Oh, have I mentioned how much I LOVE Fall yet?
🎃🎃Anyways. Where was I? Yeah so combine all the Fall flavours; nutmeg, ground ginger, all spice, ground cloves & cinnamon, with a little pumpkin purée, some simple , and finally some corn syrup caramelization and you’ve got yourself some pumpkin spice marshmallows!! Stick a couple of those between some baked phyllo pastries layered with & brown sugar then stack a couple of those and you’ve got your very own 🍁🍁Pumpkin Marshmallow Caramelized Phyllo “Napoleon” Pastries

🍓🍋Trying to catch the last little moments of Summer with this Lemon Custard Tart🍋🍓
But hey, I mean Fall can’t be all that bad with the cold, the rain, the dying leaves, the fact that Winter is coming closer and closer and closer... 😭😭🌤⛅️🌥☁️🌧🌨❄️❄️ I can’t lie that Christmas is probably my favourite time of year ☃️🎄😍 but the cold, oh god do I HATE the cold 🤒🤒
Let’s make the best of it this year, though! It’s only worse if we keep thinking about how bad it is (or will be)! Think of all the pumpkin🎃 spice desserts, the carrot🥕 cakes🥧, the gingerbread rolls and eggnog Yule logs, the peppermint and red velvet baking, the maple fudge, the shortbread cookies, 🤤🤤🤤🤐 I guess it’s not all bad...

❗️This may be one of the toughest recipes I’ve done yet, the technique and every single little detail that had to be PERFECT made this task extremely tedious!
‼️BUT that’s why these little sweets are such a delicacy and the challenge of making them is part of what makes them so special, not everyone can do it!!
🤫Going to be completely honest here it took me about 16 batches to get ONE successful batch... then maybe another 6 to get my 2nd🤫
🌱Ingredients🌱
▪️Egg whites (aquafaba for vegan)
▫️Non-refined super-fine sugar
▪️Confectioner’s sugar
▫️Almond meal / Almond flour
➕Flavouring agent (e.g. extracts)
➕Colouring agent (e.g. blueberry purée)
➕Filling (e.g. vegan buttercream)

☕️Cappuccino / White Chocolate Cheesecake☕️
Cappuccino cheesecake (so refreshing!) satisfies the sweet tooth in you but also has a hint of bitterness that makes it far from heavy. I made two and one is already gone 🤭

💥Chocolate on chocolate on chocolate💥
Chocolate sponge cake layered with chocolate-hazelnut cream covered with a chocolate glaze and decorated with chocolate shavings all over the sides 🤤🤤
Had a lot of fun with this one; I thought it would turn out overwhelmingly chocolate-y and sweet BUT to my surprise I felt like I could eat the entire cake and still want more 😂
