Pizza Rolls – An Easy Kid-Friendly Meal Idea 🍕

One thing nobody tells you about growing a small business... eventually your equipment outgrows your kitchen. 😅
My fruit slicer is one of the hardest-working tools in our shop and helps me process countless pounds of fruit for our SIM-R Pot blends. But when it comes time to clean it? That's where things get interesting. 🙈
A commercial-sized slicer and a regular household sink aren't exactly a perfect match, so cleaning takes a little extra creativity (and a little extra time!).
It's a good problem to have though...every challenge like this is a reminder of how far we've come and how much we've grown. ❤️

Best Ever Banana Muffins
Ingredients
• 3 Large Ripe Bananas
• 1/3 cup White Sugar (substitute with 1/4 cup of honey or maple syrup)
• 1 Egg
• 1/3 cup oil vegetable oil is best
• 1 1/2 cups All Purpose Flour
• 1 tsp Baking Soda
• 1 tsp baking powder
• 1/2 tsp Salt
Instructions
1. In a medium bowl, mash bananas with a fork.
2. Add Sugar and stir to combine.
3. Stir in Egg and Oil to combine.
4. In a separate bowl, combine flour, baking soda, baking powder and salt.
5. Add flour mixture to wet ingredients. Stir to combine. You can add 1/2 cup of nuts, craisins or chocolate chips here as well.
6. Divide into 12 lined muffin tins and bake at 425 degrees for 5 minutes, then reduce temperature to 350° and continue baking another 10 to 12 minutes. Once the muffins are golden brown, remove them from the oven and cool them.

Here is my biscuit recipe, a staple in our house with soups, chilies, or enjoyed on their own!
Ruthie's Buttery Biscuits
▪︎ 2 1/2 cups All Purpose Flour
▪︎ 1 tsp Salt
▪︎ 1 Tbsp Baking Powder
▪︎ 1 tsp Sugar (optional)
▪︎ 1/2 cup Cold Butter
▪︎ 1 Cup Buttermilk (or 1 cup milk with 1 Tbsp lemon juice or vinegar, let sit 5 min)
• Combine dry ingredients and then cut in butter (with pastry cutter or fork). Leave butter a little chunky to allow for airy biscuits when cooked
• Once mixture is a crumbly texture add milk.
• Combine stirring and then knead on floured surface for a minute (until dough has formed and not crumbly).
• Roll out in rectangle, fold over (making 2 layers of dough) & roll again. Fold over one more time then roll to desired thickness.
• Cut into desired shapes and place on parchment lined cookie sheet.
• Bake at 375 degrees 30 minutes or until browned.

🍯🥜 Honey Nut Squares
Only 4 ingredients and no baking required!
These Honey Nut Squares are one of those simple treats that come together in minutes and disappear just as quickly. Perfect for lunchboxes, after-school snacks, or when you're craving a little something sweet.
Ingredients:
🥣 3½ cups Cheerios (I used Multigrain Cheerios)
🍯 ½ cup honey
🥜 ½ cup peanut butter
🍫 1 cup chocolate chips
..
Directions:
1️⃣ Line a 9 x 9 baking dish with parchment paper (or lightly grease with shortening). Set aside.
2️⃣ In a small bowl, combine honey and peanut butter. Microwave for 30 seconds and stir until smooth.
3️⃣ In a large bowl, mix together the Cheerios, peanut butter, and honey mixture until well combined.
4️⃣ Press firmly into your prepared 9 x 9 dish.
5️⃣ Melt the chocolate chips in the microwave until smooth. Start with 30 seconds, then continue in 20-second intervals, stirring between each. Pour the melted chocolate over the squares.
6️⃣ Refrigerate for 1 hour to set. Cut into squares and enjoy!
These can be stored in the fridge for up to a week. Trust me... they won't last that long—they're that good! 😊
And if chocolate isn't your thing, you can leave it off entirely. They're still absolutely delicious without it.
