🚨Garnish Game Level 100🚨 With this homemade honeycomb garnish.. This is Part Two of the Honeycomb Old Fashioned and we’re making the garnish from the previous video. If you haven’t watched it, scroll back after this video and take a look and give the honeycomb liqueur a try. 📌For The Honeycomb Garnish 330gr Sugar 120gr Glucose 50gr Honey 20gr Baking Soda (Bicarbonate of Soda) 50gr Water 1. Add all but the baking/bicarbonate of soda to a pan and place over a medium heat, gradually cooking until the mixture reaches 150°c NB: The sugars will start to caramelise and turn golden brown but this is what gives honeycomb its at distinctive colour. 2. Remove from the heat and whisk in the baking/bicarbonate of soda. NB: Your honeycomb will naturally rise, but keep whisking to aerate. 3. Pour into a baking dish lined with greaseproof paper and allow to cool - this will take approximately 1.5hrs. 4. Once cooled and hardened, simply cut up or brake apart and store in an air-tight container until needed. I find that a couple of silica gel packs help combat the moisture.
