I love baking my own birthday cake! 🎂

I’ve been busy working on my Christmas cookie plate. We’ve got Linzer cookies with raspberry jam, egg nog cookies, strawberry chocolate hearts, and chocolate coconut thumbprint cookies. I also made a blueberry cheesecake and another chocolate Yule log. Merry Christmas! ❤️🎉🎄☃️

These chocolate thumbprint cookies won’t last!
Recipe:
1 1/2 cup flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup softened butter
1/2 cup brown sugar
1/3 cup white sugar
1 tsp vanilla
1/2 tsp coconut flavouring
1 egg
2 tsps milk
1 cup shredded coconut for dredging
1 cup white or dark chocolate chips for melting
1/4 cup crushed candy canes and raspberry jam for decorating middle
Cream butter with sugars in a mixer until fluffy. Add egg and flavourings and mix for I minute. Add dry ingredients and milk and mix just until combined. Form into balls, dredge in coconut and make an indent with the back of a small spoon. Place on greased baking sheet and freeze for ten minutes. Place in preheated oven set at 350F for 12 minutes. Remove from oven and use back of spoon to flatten the indent again and put back in oven for 1 minute longer. Let cookies cool, then melt chocolate in microwave at 18 second increments. Spoon melted chocolate into indents and quickly add crushed candy canes or a drop of jam to the chocolate. Let cookies set. So delicious!
