Crispy Baked Parmesan Zucchini Rounds
Delicious with some Fresh Picked Shearlea Acres Zucchini ❤️

Crispy Baked Parmesan Zucchini Rounds

🛒 Ingredients:
• 2 medium zucchinis, sliced into 1/4 inch thick rounds
• 1 tablespoon olive oil
• 1/2 cup Parmesan cheese, finely grated
• 1/4 cup breadcrumbs, optional, use Panko for extra crunch or omit for lower carbs
• 1/2 teaspoon garlic powder
• Salt and freshly cracked black pepper, to taste
• Fresh parsley, chopped, for garnish

👩‍🍳 Directions:
1️⃣ Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
2️⃣ Wash the zucchinis well and slice them into even 1/4 inch thick rounds.
3️⃣ Place the zucchini rounds in a bowl. Add the olive oil, garlic powder, salt, and freshly cracked black pepper. Toss until all zucchini rounds are evenly coated.
4️⃣ In a small bowl, mix the grated Parmesan cheese with the breadcrumbs, if using.
5️⃣ Spoon a small mound of the Parmesan mixture onto the top of each zucchini round.
6️⃣ Bake on the prepared sheet for 15 to 20 minutes, until the zucchini is tender and the topping is bubbly, crisp, and golden brown.
7️⃣ Remove the baking sheet from the oven. Transfer the crispy zucchini rounds to a serving plate. Garnish with fresh chopped parsley.
8️⃣ Serve immediately while the Parmesan topping is still crisp.
