Every year for the holidays I make handmade gifts for people, usually a mix of edible treats and snacks, as well as bath related products. This year I made a really delicious Gingerbread granola, and saved a little for myself to enjoy after the hustle and bustle of the holiday season. It was tossed in a homemade gingerbread spice mix, and dried mandarin oranges, craisins and toasted coconut chips. With it I made a persimmon and ginger compote and orange segments, topped with fresh cranberries.
