Port City - âthe one with the marshmallowâ
This is one of our more unexpected cocktails on menu. It reads like it would be a heavier drink with roasted barley and starchy from green banana, but we add an enzyme thatâs found when making beer to break it all down and make it soft and delicate.
We specifically use green bananas to get a natural sour and bright flavour note, with manzanilla sherry to help dry it out and add more âgreenâ characteristics.
We finish this punch off with miso banana marshmallows on a banana leaf, because who doesnât want a little fun with their cocktails?

Olive Brine in an Old FashionedâŠ? đ€
You wouldnât think it, but yes, olive brine does work and should belong in an Old Fashioned. The simplest way of putting it - it seasons the cocktail beautifully. We smoke our castlevatrano olives with applewood which creates more depth of umami and notes that pair well with the whisky, as well as the Kokuto (thatâs fancy Japanese black sugar - think malty brown sugar with more alkaline notes)
The garnish is a piece of chocolate that brings all the flavours together, and letâs face it, you deserve something special too.

Buñuelos de bacalao ~ Crispy salt cod fritters packed with shredded salt cod. Served with all of the trimmings of course.

Thereâs always that one drink thatâs a little hard to say.
The Scorpino/Sgroppino/Sorbetto is a classic Italian cocktail consisting of sorbet and sparkling wine. We source our mango sorbet from local legends and our sparkling from for a match made in heaven. Add a bit of tequila, and everybodyâs happy.
