Brussel Sprout Sliders
This is a great way to get extra vegetables into any barbecue! The Brussel sprouts make fun mini buns and so many will be delighted to try this bite. If you do not have a barbecue, you can easily make these under the broiler.
Medium Brussel sprouts, trimmed 12
Olive oil 1 tsp.
Cooking oil 1 tsp.
Pork Tocino 12
Cut into 1 ¼ -inch pieces
Mozzarella cheese 12
Cut into 1-inch pieces, ¼ inch thick
Cherry tomatoes 6
Cut in half
Balsamic vinegar ¼ cup
4 – 5 inch toothpicks 12
soaked in water for 15 minutes
Toss the olive oil and Brussel sprouts together. Place om a prepared baking sheet and roast in a 375ºF oven until tender, about 15-20 minutes. Remove from oven and allow to cool until easy to handle. Cut in half.
While the Brussel sprouts are roasting, heat the cooking oil in a medium pan on medium. Add the tocino pieces and cook for about 2 minutes on each side. Remove the pieces from the pan and set aside.
To assemble the sliders, place a top half of a Brussel sprout onto the skewer. Next add a piece of mozzarella, followed by a Tocino piece, then half a cherry tomato, and the bottom half of the Brussel sprout, onto the skewer.
Heat the barbecue to about 350ºF. Place the skewers on a prepared grill and grill for about 3 minutes, flipping over once half way through or until the cheese is softened. Remove from the grill onto a plate and drizzle with balsamic vinegar.
Makes 12
*To make under the broiler, place skewers on a prepared bake sheet, and broil for 2 minutes on each side, until cheese is softened. Remove from oven to a plate and drizzle with balsamic vinegar

Cheesy Potsticker Omelette
We just shared this recipe but since it’s National Egg Day, it seems perfect to share again!
Siwin pork and vegetable potstickers* 4 or 5
Large eggs 2
Milk 2 tbsp..
Soy sauce 1 tsp.
Sesame oil 1/4 tsp.
Pepper 1/8 tsp.
Shredded cheddar cheese 2 tbsp.
Thinly sliced green onions 1 tbsp.
Shredded cheddar cheese 2 tbsp.
Chili Crisp**, optional 1-2 tbsp.
Micro greens 2 tbsp.
In a small pan, about 7-9 inches, cook the potstickers according to package directions. Making sure all the water has evaporated. Lower the pan to medium-low.
While the potstickers are cooking, in a small bowl, whisk together the eggs, milk soy sauce sesame oil, and pepper, until well combined and frothy. Stir in the cheese and green onion.
Once the pan has cooled, pour the egg mixture directly over the potstickers in the pan, making sure they are evenly spaced.
Cook gently stirring occasionally for about 3 minutes, until the eggs start to set. Add a lid and cook for another 2-3 minutes, until the eggs are mostly set. Turn the heat down to low and remove the lid. Sprinkle on the second amount of cheese and cover again. Cook another 1-2 minutes, until melted and the eggs are full set.
Slide onto a plate, or eat the omelette straight from the pan. Top with chili crisp and micro greens.
Serves 1
*Or which ever Siwin potsticker you have in the freezer
**If you don’t have chili crisp you can always add 1-2 tsp. of sriracha sauce, or as much or as little as you want.

Happy Hamburger Day! Skip the ordinary—try our sweet, savory tocino burger!
Patties: Combine 375 g chopped Siwin tocino, 375 g ground pork, ½ cup panko, 2 tbsp apple cider vinegar, 2 tbsp brown sugar, 3 minced garlic cloves, 2 sliced green onions, 1 tsp kosher salt, and 1 tsp white pepper. Mix well, form into 6 patties, and rest 30 min.
Coleslaw: Mix 2 cups prepared coleslaw, ½ cup apple matchsticks, 3 tbsp cilantro. In a bowl, whisk ¼ cup apple cider vinegar, 1½ tbsp sugar, 1 tbsp sesame oil, 1 tbsp sesame seeds, 1 tsp fish sauce, and ½ tsp salt. Toss with slaw.
Sauce: Mix ½ cup mayo, 3 tbsp relish, 3 tbsp banana ketchup, 3 minced garlic cloves, 1-2 tsp chili flakes, ½ tsp salt. Let sit 15 min.
Grill: Cook patties 3-4 min each side to 160ºF. Brush pineapple and onion slices with olive oil, grill 2 min each side.
Assemble: Spread sauce on buns. Add onion, patty, pineapple, avocado slice, and ⅓ cup slaw.
Enjoy! Serves 6.
*Banana ketchup is available in Asian markets or ask your grocer.

Tosino Breakfast in a Mug
"This Victoria Day, spend more time outdoors and less on a busy breakfast. Whip up a quick tocino breakfast in a mug—just a few minutes in the microwave, and you're ready to go!
Butter 1 tbsp.
Large egg 1
Milk 3 tbsp.
Salt and Pepper pinch
Bread, stale, cut into pieces 1 cup
Cooked pork tosino 3 tbsp.
Chopped spinach 3 tbsp.
Grated cheddar cheese 2 tbsp.
In a large coffee mug, about 312 mL to 400 mL or 1 ¼ to 1 ½ cups, add the butter. Microwave on high until melted, about 30 seconds. To the mug add the egg, milk, salt and pepper. Mix well until the egg and milk are well incorporated. Add the next 4 ingredients and mix well. Let stand for 1 minute.
Microwave the mug on high for 1 minute and 30 seconds or until the edges are coming away from the edge of the mug. Remove from microwave and serve hot.
