New business alert! My sister in law ‘s new venture. RUN don’t walk...

Hi! I am Kaitlin, the baker behind Midnight Macarons. I am a mom of 3 girls. A 2 year old and 12 week old twins. They say “sleep when the babies sleep!” And while that’s good advice, when then is there time to make macarons?? What started off as me trying something new, something for me that was not baby/toddler/mom related, turned into a full blown obsession and the pursuit for the perfect macaron! It became both an amazing outlet for me during this whole pandemic business, but also such a fun challenge. These finicky little cookies have a never ending list of critical variables that affect their outcome, (ingredient ratios, baking temps, baking time, oven hot spots and fluctuations, humidity, meringue stability, the perfect macranage, drying time, baking mats vs parchment paper, convection vs conventional, middle rack vs lower rack, to name a few 😜) and this past year my goal was to conquer this cookie! When my babies sleep, I bake macarons. Sometimes that means late nights, but you guys! Totally worth it. Thanks for coming to check out my new adventure.

It’s official, I have moved to BC and as of September 2nd Simplistic Bakehouse has closed it’s doors for a time. A huge THANK YOU to everyone who has supported my hobby business over the years. Thank you for all your likes, comments, recommendations, orders and for trusting me with your special events! I will be keeping all my permits and licensing up to date so that when I return to Edmonton I can get right back into it. Until then 😘

It's that time of year again! I will be taking time away from cakes for the next few weeks in exchange for a life full of dance competitions. I have proved in past years that I am not capable of balancing both. I will be returning messages as I can but please be patient.

When its not wedding season I get to play with lots of fun birthday and shower cakes!
