Tonight’s plans: Caprese Gnocchi featuring our YUM YUMS® Cherry Tomatoes! 🍅🍝
Ingredients:
🍅 1 lb Yum Yums® Cherry Tomatoes
🍅 1 lb store bought gnocchi
🍅 3 garlic cloves, sliced
🍅 1 tbsp olive oil
🍅 2 tsp balsamic vinegar
🍅 4 oz fresh burrata, torn
🍅 1 tsp lemon zest
🍅 Fresh basil leaves, for garnish
🍅 Basil pesto, for serving
🍅 Salt & pepper, to taste
Method:
1️⃣ Preheat oven to 450°F and line a large baking sheet with parchment paper.
2️⃣ In a large bowl, toss together gnocchi, Yum Yums® Cherry Tomatoes, garlic, olive oil, balsamic vinegar, salt, and pepper. Spread evenly on the baking sheet and roast for 20 to 25 minutes, tossing halfway through, until the gnocchi is tender and the tomatoes are beautifully roasted.
3️⃣ Top with torn burrata, basil pesto, lemon zest, and fresh basil. Season with salt and pepper to taste, then finish with a few dollops of basil pesto. Serve warm and dig in!

Last month, we reached an exciting milestone as we began planting in our new ultra lit greenhouse in Delta, British Columbia.
With this added capacity, we’re strengthening our ability to provide a year round supply of premium greenhouse grown vegetables while continuing to invest in controlled environment agriculture and advanced growing technology.
