The more information people have to hunt for, the more likely they are to leave without ordering
Honestly though, I used to make a lot of these mistakes myself.. Especially hiding behind my brand because I’m naturally shy 🥹
But over the last 10 years of running a bakery business, I’ve learnt that small changes can make a huge difference to your sales, customer experience, and growth

I was so fed up of my cookies always spreading too far when they bake 😣
I genuinely used to wait by the oven nervously to see how they were going to come out 🥲
Most of the time they were flat like pancakes and NEVER baked consistently… so I had to fix it ASAP
I worked on my method and technique, paying attention to the small steps that actually matter (not just the ingredients) so I could finally bake chunky cookies like this
My biggest cookie tips:
🍪 Don’t cream butter & sugar! It adds extra air into the dough and I’m going for thick & chunky, not light & cakey
🍪 Pull apart the dough after mixing instead of leaving it as one dense lump. It helps build texture and stops the cookies being dense when you bite into them
🍪 Portion & roughly ball the dough BEFORE adding fillings. It makes everything easier and helps keep fillings secure in the middle
🍪 Always freeze the cookies before baking. It helps with structure, consistency and means I only bake what’s needed instead of wasting a whole batch
🍪 Don’t move them too quickly after baking. Cookies are delicate straight out the oven and continue setting on the tray for 20-30 mins
I’ve used this exact method & recipe for over 5 years now and genuinely wouldn’t bake another cookie recipe again 🥹

What ACTUALLY works to bake these chunky cookies?
🍪 Use cold chopped butter (literally straight from the fridge)
🍪 Don’t cream butter & sugar together
🍪 Use brown and white sugar for the best flavour
🍪 Mix by hand as much as possible and use low speeds on the mixer to avoid over mixing!
🍪 Add eggs LAST with an extra yolk
🍪 Pull apart the dough before portioning to avoid it being dense (don’t skip this one!!)
🍪 Shape the dough in your hands without rolling around (NO cookie scoop)
🍪 Store dough in the freezer and bake straight from frozen
I thought being a good baker meant I could bake cookies on the first go butttt i was wrong..
It took me ages to figure out how to bake consistent cookies that I didn’t stress about every time they went in the oven 😅
Now I’ve bundled it together so that we can all start baking better cookies, some of you are already seeing the benefits 🥹

When I started baking cookies I thought they would be easy because I was a ‘good baker’
But they came out sooo flimsy I couldn’t even pick them up
They also spread too far, were overly greasy, crumbly or the filling would be leaking out the bottom
I spent SO long working on my technique & method so that I could stop the anxious waiting by the oven each time I baked them
And finally have consistent results so I could be confident in selling them to my customers
So what actually worked?
🌼 using cold cubed butter and not creaming it with the sugar
🌼 always mixing on a slow speed & actually watching the dough come together (no distractions)
🌼 adding an extra egg yolk for better structure and richness
🌼 pulling apart the dough into smaller nuggets nuggets when it comes out the mixer, before portioning into cookie dough balls
🌼 portioning & weighing all the dough first THEN adding filling after for stuffed cookies
🌼 utilizing the freezer to store cookie dough balls & always baking from frozen
🌼 leaving cookies to rest on the tray after baking
And I hope it goes without saying.. I ALWAYS recommend using a digital scale, weighing everything in grams for accuracy (no cup measures!)
