I usually double this recipe because they keep well on the counter for a week (if they last that long) and also freeze well. They're light and airy with a hint of peanut butter flavour. Delicious!

Peanut Butter Chocolate Chip Shortbread Cookies

1 cup salted butter, softened
1/3 cup smooth peanut butter
1/2 cup confectioners' sugar
1 1/2 cups all-purpose flour
1/2 cup corn starch
1/2 cup mini chocolate chips

Preheat oven to 375°F.

Using an electric mixer on medium speed, cream butter, peanut butter and confectioners' sugar until smooth.

Add the flour and corn starch and continue mixing until no flour remains visible. Add the chocolate chips and mix until well combined.

Roll the dough into 1-inch balls and place them on a parchment lined baking sheet, 2" apart. Flatten with a fork.

Bake for 10-12 minutes, turning halfway. Remove from the oven when the edges are just starting to brown. Cool on a rack for 5 minutes before removing them to cool completely. Store in an airtight container. They freeze well. Makes about 30 cookies.

Like traditional shortbread, these cookies are pale on top and slightly brown on the bottom. They are light and airy with a hint of peanut butter flavour. Recipe coming soon!

I've been informed by the Cookie Monster in the house that we have no cookies left. For my house, that's not the norm. I usually have a selection of cookies in the freezer. Needless to say, I'll be baking for the next few days.

I've got a batch of Peanut Butter Chocolate Chip Shortbread going into the oven. Shortbread isn't just for Christmas!

Cookie cutter inspiration comes from everywhere! Recently I saw my granddaughter's adorable Halloween themed notepad and knew I had to make this vampire into a cookie cutter. Georgia's Dracula will be available in my online store later this afternoon. 😊

I decided to add some blackberries and blueberries to my rhubarb crisp this time. Instead of flour as a thickener, I added the same amount of minute tapioca. It was perfect! And of course what's rhubarb crisp without a big scoop of vanilla ice cream? Pure heaven!

This is a super simple recipe. I will put in a mix of different fruit along with the rhubarb if I happen to have it. I will use strawberries, raspberries or blueberries, always keeping the total amount the same. Always use a glass pan when baking rhubarb because the rhubarb will stain a metal pan. I learned this from experience! 😉

Topping

1/2 cup butter
1/2 cup all-purpose flour
1/2 cup large flake oats
1/2 cup brown sugar

Filling

4 cups chopped rhubarb
1 cup sugar
3 tbsps all-purpose flour

Preheat oven to 350° F. Mix all topping ingredients and set aside.

Mix rhubarb, sugar and flour together until well coated. Place in an 8" square glass pan and cover with topping. Bake for 30-40 minutes, until browned and bubbly. Yield: 6-8 servings.

I just took my first rhubarb crisp of the season out of the oven. I added blueberries and blackberries to this one. It smells heavenly! I can't wait for dessert tonight. I'll respost my recipe in a little while.

Look at how cute this little berry basket is! I can add them to my shop if anyone is interested in using them to use as a prop for their fruit or vegetable cookies. I can also make a smaller version if the standard size is too big. Let me know in the comments.

I'm always sad to see the last of my Lily Of The Valley fading. My grandparents had Lily Of The Valley lining their laneway. I remember driving up to their house in the spring with their sweet scent wafting through our car windows. It was absolute heaven to me. I can't help but think of the time spent at their house as a child when I smell Lily Of The Valley.
