'Geen vrouwtje zo rijk of zo arm of ze maakt haar panneke warm' is today's quote! I can still hear my grandmother say it while she was flipping pancakes. Today is 'Lichtmis', a Christian holiday I can not remember the meaning of, apart from pancakes being made on this day.

Vol-au-vent originally was the name of a pastry so light it 'flies with the wind'. In Flanders it is the name of the ragout with which we fill the pastry. No vol-au-vent without the pastry! Classic Flemish winter dish and so so so good with tiny meatballs!🐔🍴

My alltime favourite Belgian dish, 'Hutsepot'! It's a stew with winter vegetables such as green cabbage, turnips and lots and lots of brussels sprouts. Even better with a smoked ham. Mmmmmmhh, get cosy!

Our first chef-to-be Patrick learnt how to make Vol-au-vent, tomate crevette, chervil soup and a Flemish appetizer with freshly peeled shrimp!

Yesterday, Patrick took our half day workshop and made Vol-au-vent with fries, tomate crevette, and appetizers with freshly peeled shrimp.
