Baba Ganoush Recipe (serves 4):
Ingredients:
• 2 medium aubergines
• ¼ cup tahini (about 60 ml)
• 3 tablespoons fresh lemon juice
• 2 tablespoons Hant extra virgin olive oil + extra for serving
• 2 garlic cloves
• ½ teaspoon sea salt
• Finely chopped fresh parsley (for garnish)
• Smoked paprika powder (for garnish)
• Optional: chilli flakes
• Pita bread, for serving
Instructions:
1. Preheat the oven to 200°C.
2. Pierce the aubergines with a fork and cut them in half. Score the flesh in a criss-cross pattern.
3. Sprinkle with salt and drizzle with Hant olive oil.
4. Place the aubergines cut-side up on a baking tray and roast until soft (about 30–40 minutes).
5. Let them cool slightly, then scoop out the flesh.
6. Add the aubergine flesh, tahini, lemon juice, olive oil, garlic, and salt to a food processor. Blend until smooth and creamy.
7. Transfer the baba ganoush to a bowl and garnish with extra Hant olive oil, parsley, smoked paprika, and optional chilli flakes.
8. Serve with warm pita bread.
