Be it a paper you failed, a bad break up or a Game of Thrones spoiler (let’s be real, this is the saddest of the three), curling up in the corner of you room with a tub of ice cream makes it all better!
Technically speaking, ice cream is tiny ice crystals in a mixture of butterfat and milk solids, held together by sugar. Any disturbance in the balance of these components and you can end up with icy, gritty, or even sticky ice cream (😷). Traditionally, ice cream is made by first making a crème anglais, a fancy term for custard. Once the appropriate amount of sugar is added, the mixture must then be frozen as fast as possible to avoid formation of large ice crystals. Many home chefs use an appliance called a churner to mix the ice cream to give it a smooth finish. At the Crumbs test kitchen we’re going to show you a way that doesn’t require any fancy machinery (although an electric hand whisk can come in handy!).

With the mango season almost over, we thought what better way to beat the heat than a mango-pista kulfi. Rich, fragrant and crunchy on the outside, it is the perfect accompaniment to any meal.

Crumbs started with a lazy afternoon bake session 4 years ago. Along the way it grew, became from simply talking about new dishes, sharing recipes and tips to a lot more, and after 3 years of nagging (read encouragement :p ) from friends and families, we have decided to share that with the world!
