Let's move on to the sauté! We combine carrot, onion, celery and diced cherry tomatoes. Brown and add the concentrate, garlic, then and rosemary and finally the demiglace. Add the dried mushrooms and cook the ossobuco for about 2 hours. Prepare a saffron risotto which we stir in butter and Parmesan and serve together.
