Forgotten Thursdays, Week 11: The Ruby.

A modern classic from 2016 by Tony Abou-Ganim in Las Vegas. Vodka, Aperol, elderflower, fresh citrus, aperol and an egg white that pulls it all into a silky, foam-crowned sour.

Newer than most we pour on Thursdays. No less worth your attention.

Forgotten Thursdays, Week 10: The Champs-Élysées.

First published in 1925. Immortalised in the Savoy Cocktail Book in 1930. Then, like a lot of the good ones, it quietly disappeared.

Named for the most famous avenue in Paris — Cognac and citrus up front, Yellow Chartreuse doing something interesting at the back.

45ml Cognac
15ml Yellow Chartreuse
20ml Lemon Juice
10ml Simple Syrup
1 dash of Angostura Bitters

Forgotten Thursdays, Week 9: The Rattlesnake.

A Savoy classic from 1930, once jokingly sold as a cure for rattlesnake bites. Rye, lemon, sugar syrup, egg whites and a hit of absinthe that gives it more bite than the name suggests.

Forgotten Thursdays, Week 8: The Palmetto.

Before the Manhattan took over, this was the drink. Dark rum, sweet vermouth, a dash of bitters. First recorded in the late 1800s and a serious cocktail bar staple until Prohibition changed everything.
