We did this weekās challenge - choosing one of the judgesā quick carb sources to create a refined weeknight dinner in just 36 mins
We chose Andyās two-ingredient flatbread⦠and honestly, this tasted fkn unreallll š„
Ingredients:
Flatbread:
- 200g self-raising flour
- 200g Greek yoghurt (we used high-protein, low-fat)
Chicken:
- 600g chicken thigh, fat trimmed
- 10ml olive oil
- Sweet paprika
- Oregano
- Onion powder
- Garlic powder
- Salt + pepper
Tzatziki:
- 100g Greek yoghurt
- Grated cucumber (squeeze)
- 2 cloves garlic
- Salt
- 3ml olive oil
Salad:
- Tomato
- Red onion
Method:
1. Mix the flour and yoghurt together until a dough forms. Knead and divide into 4 equal portions, roll into flatbreads
2. Add a small amount of olive oil to a hot pan and cook flatbreads for 1-2 minutes on each side until golden and cooked through
3. Season the chicken thigh generously with all seasonings. Spray a pan with olive oil or avocado oil and pan-fry until golden and cooked through (or air fry). The key to elite chicken thigh is generous seasoning - we go through a LOT of sweet paprika in this house
4. While the chicken cooks, make the tzatziki by mixing together Greek yoghurt, grated cucumber, crushed garlic, salt and olive oil
5. Assemble wraps and enjoyyy
