She appeared to embrace life on a grand scale, especially after her cancer diagnosis, living it with genuine love and authenticity. What touched me most was how she allowed others to join her in the challenging journey of battling cancer, not just showcasing her business achievements. This mirrored the essence of her real life.

Hey friends! May is Domestic and Family Violence Prevention Month, and to support the cause, I'm joining the 100 Burpees a Day in May challenge to support RizeUp Australia. For the whole month, I'm committing to doing 100 burpees every day to raise awareness and show my support for those affected by domestic violence.
I would love for you to join me in this challenge! Let's band together and make a difference. You don't have to be a fitness expert to participate โ anyone can do burpees! It's a great way to challenge yourself physically while supporting a cause that's so important.

Green never looked so beautiful! These nutrient-dense energy bites harness the earthy beauty of matcha while also combining the sweetness of Medjool dates and coconut. Make a batch today and store them in the refrigerator or freezer to enjoy later (if you can wait that long!)
MEGA MATCHA ENERGY BITES
INGREDIENTS
1 c. almond flour
1ยฝ Tbsp. quinoa flakes
6-8 organic Medjool dates, pitted
A trickle of coconut water (or regular water)
2ยฝ Tbsp. coconut oil
2 tsp. chia seeds
1ยฝ tsp. matcha green tea powder
1 serving vanilla Complete
4 Tbsp. fine desiccated coconut
INSTRUCTIONS
1. Combine ingredients together in a food processor. Add a trickle of coconut water to the mix and keep blending until moist and cohesive.
2. Using 1 heaping Tbsp. of the mixture at a time, roll between your hands to form 1- inch balls. (Optional: Roll in more matcha if you want more green color.)
3. Store in the refrigerator for up to 1 week in an airtight container or in the freezer.

The Australia Day ๐ฆ๐บPublic Holiday is coming up next weekโฆ So Who loves lamingtons?? ๐โโ๏ธ
Well hereโs a healthy take on the Aussie classic. These easy no bake lamington balls will be sure to hit the spot!!
๐๐ก๐๐ฅ๐๐๐๐๐ก๐ง๐ฆ
BALLS:
*1 1/2 cups raw cashew nuts
* 1 cup desiccated coconut
* 1/4 cup coconut oil
* 1/4 cup organic maple syrup, or to taste
* 1 scoop Vanilla Complete Protein
* 2 tsp vanilla bean paste or extract
RASPBERRY CHIA JAM
* 2 cups frozen raspberries
* 2 tbs chia seeds
* 1 tbs lemon juice
* 2-4 tbs pure maple syrup, to taste
CHOCOLATE COATING:
* 100g 80% dark chocolate, broken into pieces
* 2 tbs coconut oil
* 1 tsp pure maple syrup
* Extra coconut (finely-shredded), to roll the balls in

BALLS - blitz cashews in a processor until it resembles a fine meal. Add remaining ingredients and blend together.
JAM - Add raspberries, seeds, juice and syrup to saucepan and bring to a medium heat. As the fruit breaks down, mix lightly with a fork. Simmer to reduce and thicken to jam consistency. Place in a jar in fridge for 1 hour to set.
COATING - Add chocolate and oil to a double boiler. Stir while it melts. Add syrup and whisk well
ASSEMBLE - Roll mix into balls and set on a tray lined with baking paper. Place in the freezer for 10min. Remove and cut in half, scoop out a small amount from both sides so you can add a small amount of chia iam. Roll back into a ball again and then place back on lined tray in the freezer for 10 minutes.
Place extra coconut in a small bowl. Roll each ball in the melted chocolate, remove with a fork then immediately coat in desiccated coconut. Set again in freezer
NOTE - instead of the raspberry jam you can swap this out for a full raspberry placed in the centre of each ball. I use frozen raspberries as I find it easier to role without squishing.
