THROWBACK TO 3 YEARS AGO ~ when the story of Flyover Fritterie impressed THE Adam Liaw enough to invite me over to the cook up - his long running TV show on SBS Food. Looking back, I was so overcome by imposter syndrome in those moments - but I’m so glad that my purpose of honoring streetfood heroes was as true and clear to me as it is today. The only thing that has changed 3 years later is my confidence - that I am the right path. I just need to keep going.

P.S. I made Kale patta chaat on this show which on the current menu. Come get your streetfood fix ❤️.

4.5 YEARS OF MAKING SYDNEY’S BEST CHAATS and I’m still amazed by how many people have never heard of chaat!

Last night, Claude confirmed something I’ve come to understand about how we got to this point in Australia. For decades, Indian food here has largely been represented by restaurant dishes, while one of India’s greatest culinary traditions—its street food culture, has remained relatively unknown.

Through Flyover, we’ve made it our mission to honour the original custodians of chaat in India ~ the street food vendors who, through dedication to their craft, generations of repeating the same recipes, and pure muscle memory, create the perfect balance of sweet, sour, spicy, crunchy, fried and fresh in every single bite.

Chaat isn’t just a dish. It’s a craft honed over generations, where texture, temperature and flavour collide in a way that’s almost impossible to explain and even harder to replicate.

In fact, after a long conversation about chaat last night, even Claude eventually ran out of words and landed on the simplest explanation: “You just have to try it to know it.” 🙂
And honestly, that might be the best description of chaat there is.
