Cooler weather and homemade soup simply belong together.
One of our recent favourites has been a roasted butternut pumpkin, red capsicum, bacon, and red onion soup inspired by one of Michael Mosley’s healthier recipes.
Roasting the vegetables first completely transforms the flavour.
The butternut becomes sweeter.
The red capsicum softens and caramelises.
The red onion adds richness and depth.
The garlic turns beautifully mellow once roasted in its skin.
Simple ingredients grown in healthy soil often create the best meals.
Recipe:
• 1 medium butternut pumpkin, peeled and chopped
• 2 red capsicums, chopped
• 1 large red onion, cut into wedges
• 3 rashers bacon, chopped
• 2 cloves garlic
• 1 litre chicken stock
• Olive oil
• Salt and cracked black pepper
Method:
Preheat oven to 200°C.
Place pumpkin, capsicum, red onion, and garlic onto a tray. Drizzle with olive oil and season well.
Roast for around 35 to 40 minutes until soft and caramelised around the edges.
Cook bacon in a large pot until lightly crispy.
Add the roasted vegetables and chicken stock.
Simmer for 10 minutes before blending until smooth.
Serve hot with crusty bread.
