Lee began his culinary journey in the kitchens of Dublin, Ireland, working at Fallon & Byrne before moving to the renowned Dakota on South William Street. It was during these formative years that he refined his craft and developed the skills that would shape his career.

After relocating to Perth, Lee joined Empire as a chef, and we are proud to have had him as part of our team for more than 16 years, including many years as our Head Chef.

Driven by a passion for fresh, quality produce and exceptional hospitality, Lee continues to lead our kitchen with his expertise. We are incredibly fortunate to have him as a valued leader and an integral part of the Empire family. 👨‍🍳🍽️
