Blending Tea
The practice of blending tea began 400 years ago in China, when jasmine and other flowers were added to enhance flavour and fragrance. While the classic blends remain popular, there are new blending styles that experiment with fruits and flowers. Practise tea blending at home. Here is the recipe to start:

Orange Spice Tea

-Ceylon tea 50g
-Orange Peel 1tsp
-Dried Ginger 0.5tsp
-Pinch of Crushed Cloves

Mix, brew, enjoy!

This dessert tea is ideal for weekend brunches or festive meals.

The first one is about Kombucha. What is Kombucha?
Kombucha is fizzy and fermented tea with probiotic properties. The origins of Kombucha can be traced back to China. It made its way to Russia through Mongolia in the 19th Century. It was popular in Eastern Europe between the first and second World Wars and lost its popularity due to scarcity of sugar and tea during the second World War. Interest to Kombucha was revived in Europe and America during 90s and it has become a popular beverage for home brewing.
Kombucha is made by fermenting sweetened black or green tea with a culture of yeast and beneficial bacteria called "kombucha mushroom" or SCOBY (Symbiotic Colony of Bacteriia and Yeast).
Kombucha is a great alternative to fizzy drinks as its lighter and contains acids and enzymes that aid digestion.
