Our bottarga is cured in-house with salt, time, and tradition, bringing a deep, savoury taste of the sea to each dish.

Meet Federico: Impasto, Passione, Fuoco 🔥
This “dough magician” from Milan, Italy, has been part of Acqua e Sale for almost four years. The warmth he brings through his hands has quietly become part of the soul of this restaurant.

His connection with the kitchen began in childhood, alongside his grandfather. Later, young Federico stepped into a professional kitchen for a trial, simply to see if this world was really for him. He never expected that the fire and aromas of the kitchen would make him stay.

🍕 His recommendation: Diavola
Long-rising dough, real tomatoes, fiery Calabrian ’nduja, and a final drizzle of good olive oil. Just the right amount of heat. It might make you sweat, but it will make you want to come back for more.

Anyone who has met Flora knows the kind of warmth she brings into the room.

Originally from Sardinia, our restaurant manager brings island romance, a love for travel, and full-hearted energy to Acqua e Sale.

When the music feels right, you might even catch her moving her shoulders and dancing with joy. For Flora, hospitality is more than service. It is about brightening someone’s day through the smallest moments.

Flora’s menu pick: **Fregula**.

One of the most authentic Sardinian dishes, it tastes like home to her. Simple, surprising, full of tradition, and rich with Sardinian soul.
