Blended the fermented chillies today. Made three flavour bombs. I fermented chillies with garlic ginger leeks onion pinaaple mangoes, which gave the fermentation a distinctive flavour, which was very good by itself but very hot so i have to balance it with vinegar and sugar . I Also play around with different ingredients , which gave the sauce very distinctive taste profile, very delicious, available but not much very limited. Shelve time more than year but plz store it in the refrigerator 1 degree to 4 degrees. Get yours soon before it runs out.

3rd year fermentation . Every year i lacto ferment some chillies to make hot sauce, and I do try out new recepies, or I do add new ingredients to my fermentation. This time I have different types of chillies from but separated them with colours, I fermented yellow ones with pinapples,mangoes, Red onion, ginger, garlic, leeks, salt brine. I will ferment these chillies for 3 weeks will be updating my progress. Gonna be hot.

I got the hand on this kilo of beautiful chillies, as you can see in the photos. Beautiful colours and shapes. Trust me, they are hot. I did try one, and um um um, hands down to amazing it was flaming, beautiful work. I'm excited to execute some hot dishes and hot sauce from these beauties. I have got some idea what I'm gonna do, but let's see. Bare with me to taste this beautiful chilly, and plz do appreciate follow them in insta check his work out.

What a day it was. The day for beautiful sake not just to see but to drink with the master makers of all those 55 types of sake or may be more I forgot to count or you can say i lost count after bit of drinking i did that day. We gathered some amazing insight of sake making,the flavours, aromas, and taste from those amazing sips of sake we took that day,no complaints at all. Round of applause for and the always amazing venue to put together this amazing event and bring these amazing sake producers to us. You can also say different parts of Japan was present in Hobart. Kanpai kanpai

YOMARI is a type of Newari food, and Punhi means full moon. Yamari Punhi is a festival celebrated in full moon day by making, eating and distributing yamari. This festival is very popular in Kathmandu valley. Yomari means tasty bread. It is a Newari festival marking the end of the rice harvest.
