Three cities, three weeks, twelve chefs.

This was one of the most demanding kitchen experiences in Cambodia, but absolutely worth it.

From late-night prep runs to pushing the line at the pass, this was the raw, unscripted reality of cooking fine dining under serious pressure. No studio setups, no retakes and no safety nets — just heat, timing, teamwork and an international brigade pushing themselves to the limit.

More importantly, the efforts behind this project will help support a new initiative for alumni from Spoons Cambodia, creating opportunities for global exchanges and continuing education.

Along the way we had the privilege of working in some incredible kitchens across Cambodia, including Embassy by Chef Kimsan Restaurant in Siem Reap with host chef Pol Kimsan, Courtyard Phnom Penh Courtyard by Marriott Phnom Penh with chef Uden Sudendi, and Novotel Holiday Resort Sihanoukville with chef Suban Luon.

The international crew included Chef Michael Brine from A Touch of Salt | Restaurant | Townsville in North Queensland, Australia; Chef Judyta Slupnicki from SheChef in Clare Valley, South Australia; Vu Tran from Ho Chi Minh City, Vietnam; Chef Mengly MORK 🇰🇭 from PINAKPOU Restaurant in Siem Reap, Cambodia — along with many other talented chefs who gave their time, energy and knowledge to the project.

She uses the fibre to craft gowns that tell its full story—from paddock to runway. Through her designs and advocacy, Nikki educates consumers about the journey of Merino wool, elevating its profile in one of the most influential style spaces: bridal and special occasions wear.

Her commitment to ethical fashion and innovation positions her as a leading voice in the slow fashion movement, spotlighting Australian Merino wool as a world-class, sustainable choice for the global fashion industry. Nikki’s influence continues to grow, as she inspires the next generation of rural women to lead boldly, think creatively, and champion the industries they believe in.
