Our sardines “heritage” (vintage 2022) represent the rare gold-standard, caught off the coast of Cambados, the heart of artisanal tinning. Using the age-old, labour-intensive ‘do xeito’ method with traditional gill nets ensures for the highest quality possible, processed locally in fresh batches and preserved at the height of the season. There are approximately 300 specially licensed fishermen left who are able to sell their catch as ‘do xeito’, representing a dwindling and precious facet of Spanish food cultural heritage.
