Recipe of the Week: BBQ Oyster Mushroom Steak

Time: ~30 Minutes

INGREDIENTS

* x2 Cluster Oyster Mushrooms
*100 g jar BBQ sauce
* ½ cup beer
*1 spring onion finely sliced
*Granulated garlic
*BBQ blend seasoning
*Cracked black pepper
*Salt
* Sunflower cooking oil

STEPS

1. Preheat oven 200c (fan) / 375f convection or 400f bake.Trim the stem from the bottom of the mushrooms, keeping it all intact in one piece.
2. Get cast-iron pan hot and heat up 2 tbsp oil and swirl to evenly coat. Place mushrooms stem side down, into the pan on the outer edge hot spots.
3. Press mushrooms with another cast-iron pan/a heavy pot. Apply a little pressure until you hear the sizzle. Lift top pan, wipe off the liquid with a towel, set to the side. Mushrooms will be releasing liquid, leave the water to evaporate for a couple of minutes.
4. Add beer to BBQ sauce in a bowl. Season mushrooms with BBQ blend seasoning, black pepper, granulated garlic, salt, and a 1 ½ tbsp oil.
5. Flip mushrooms carefully with tongs.
Repeat the pressing step again and leave to cook for a few more minutes. Season mushrooms again with bbq seasoning, granulated garlic, black pepper, and salt.
6. Add a little oil around the edge of the pan and swirl, to prevent sticking, then flip mushrooms carefully again.
7.Turn mushrooms again until charred and crispy on both sides, then place gently into the bowl of BBQ sauce, push down with hands until mushrooms are completely coated.
8. Place saucy mushrooms onto a parchment-lined baking sheet and add a little more BBQ sauce to the top of each mushroom.
9. Cook in the oven for 10-15 minutes. Remove and serve on a chopping board, garnish with green onion.

1 punnet of Soko Mushrooms (Oyster or Button mushrooms)
100g butter, 2 chopped onions
1 crushed garlic clove
2 tbsp plain flour
1 chicken stock cube dissolved in hot water
4tbsp of greek / double cream plain yoghurt
Fresh herbs of choice (parsely is great)

1. Brown the onions and garlic in the butter until soft (10 mins)
2. Add the mushrooms and cook over a high heat for another 3 mins until softened. Add the flour and stir to combine. Pour in the chicken stock, bring the mixture to the boil, and simmer for 10 mins.
3. Place the soup into a blender and add the cream until soft.

INGREDIENTS

INSTRUCTIONS

Hеаt thе butter аnd оil in a lаrgе раn or ѕkillеt оvеr medium-high hеаt.

Add the muѕhrооmѕ аnd сооk fоr аbоut 4-5 minutеѕ until gоldеn аnd сriѕру on thе еdgеѕ.
Stir thrоugh thуmе, 1 tаblеѕрооn оf раrѕlеу аnd garlic. Cook fоr a further 30 seconds, until fragrant.
Sеаѕоn generously with ѕаlt and рерреr (to your tаѕtе). Sprinkle with remaining parsley and serve wаrm.

5 reasons to grow oyster mushrooms?

1. They need minimal land/space: just 400 -500 m2 is sufficient to start growing oyster mushrooms. Making them a great grow your own niche crop for unused space.

2. Short growing cycle: they take just 4 to 5 weeks from spawn to harvest. This is helpful for regular cash-flow and makes them a great add-on crop.

3. Low input costs: oyster mushrooms use low-value agricultural waste e.g wheat straw, cotton waste, and maize stover, and turn them into high-value mushrooms.

4. Can use mushroom waste for a vegetable garden: waste from growing mushrooms can be composted for growing other vegetables on your farm or backyard.

5. Great for a healthy, nutritious diet: mushrooms are a great source of nutrients such as protein, vitamins (B12 vitamins, vitamin D), and selenium (antioxidants). You are what you eat, and so is your immune system.

Beginner's Guide to Mushrooms 🌱

Lesson #1: What is spawn (mushroom seed)?

I put ‘mushroom seed’ in brackets there because it is not really the correct term we use as there is nothing actually called mushroom seed.

We have what is called mycelium, this is a fibrous web-like material that feeds off dead decaying material. Basically, any ‘material’ (commonly grains or sawdust) that is completely covered by this mycelium, is called spawn.

So in essence, if I have wheat covered in mushroom mycelium, or sorghum, or sawdust covered in mushroom mycelium – we call that spawn!

So as a serious mycologist or mushpreneur I hope you will also be using the correct terminology when referring to spawn and correct those that call it mushroom seed.

Spawn is one of the most critical inputs in your mushroom production and so it is important to know what you are looking for when you are purchasing it.

What does good quality spawn look like?

Good quality spawn will ensure that you eliminate the chances of contamination at this stage and you will maximise yield if you have fresh spawn that is purchased at its peak performance stage. The following are some key things to look for:

Good quality spawn should be produced in a hygienic set up that takes extra care to eliminate contamination

It must be fresh and have clear production and expiry dates provided to the customer

It must be completely white with no discoloration

It must be a solid block that has had minimum handling

If it is not in mushroom bags it must be packaged in a manner that allows the spawn to breathe and so there are no excess moisture droplets that form in the bag

Which spawn should you choose?

When you are choosing your spawn you want to use reputable sources. If working with new suppliers then it is best to have a small trial batch so you can make an informed decision and not suffer unnecessary losses.

Growers should not shun local spawn as it is often cheaper and can be paid for using local currency. This in turn lowers the cost of production and will allow the grower to increase profit margins.

When choosing between grain spawn and sawdust spawn it is important to note that sawdust spawn is more suitable for oyster mushrooms and shiitake mushrooms rather than button mushrooms.

The variety of mushrooms you are growing should also be something you make sure that you check beforehand. If you want to buy pink oyster spawn ensure that you know the state that and the label matches what you are looking for. This is especially important if you are buying spawn online as returns are very difficult.cult.
