5 Steps to Perfectly Grilled Irvine’s Chicken

While grilling chicken is a hot-weather favourite, it’s also an easy
target for charring and even worse drying out. But fear not!

Check out our 5 tips for perfectly grilled chicken:

1. It’s all in the seasonings: Make sure to taste your particular
marinade or rub before you put it on the chicken. This will help
you to avoid a cooking disaster later on. Mix it up by trying a few
different barbecue sauces, or a blend of marinades and spice rubs.

2. Make sure the grill is greased: It’s important for the chicken to
have either a good rub with oil or a marinade to make the outer
layer moist. This will prevent the pieces from sticking to the grates
of your grill. Just in case, use a bit of non-stick cooking spray too.

3. Use the right utensil: A pair of tongs or a large metal spatula
are the best tools for handling meat on the grill. That way, you won’t have tons of poke holes from prongs or forks, allowing the
chicken to be more evenly cooked and the juices to stay inside.

4. Allow the heat time to cook your chicken: A common mistake
for novice grillers is leaving the barbecue top open. Closing the lid
lets the meat cook fully because the grill acts more like an oven.

5. Make sure it’s cooked all the way through: The thicker the
piece of chicken, the longer it will need on the grill. Just because
it’s been on the grill for a while doesn’t necessarily mean it’s done.
Chicken should be cooked until its internal temperature is 180°C
and there is no visible pink.

Do you ever take chicken out of the freezer to defrost before
leaving for work in the morning, only to get home and not feel like
cooking?

Here are some helpful tips on how to defrost and refreeze chicken:

- The chicken needs to be properly defrosted in the fridge, below 5°C, ideally on the lowest shelf.
- You can only re-freeze the chicken if it has been defrosted for less than 24hours.
- DO NOT defrost chicken at room temperature, as bacteria grows and multiplies quickly. If you re-freeze chicken out of the fridge, the bacteria will keep growing when its defrosted.
- Thorough cooking will destroy bacteria, so ensure that the chicken is cooked through, and that raw chicken doesn’t touch anything that isn’t getting cooked or has already been cooked.

Remember it is safe to re-freeze chicken meat that has been
defrosted but always remember in the fridge and not for longer
than a day.

Celebrate shrove Tuesday in style with this fluffy pancake recipe.

The simplicity of a pancake batter provides the perfect base for a
range of flavours, ingredients or cuisines; both sweet and savoury.

Make this recipe today!

Ingredients:
1 Large IRVINE’S Egg
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp cinnamon
1 cup milk
1/2 tsp vanilla
2 tsps orange zest, plus slices for garnish
butter, for cooking

Method:
1. Whisk together the flour, baking powder and cinnamon in a bowl.
2. Combine the egg, milk, vanilla and orange zest in another bowl.
3. Add the wet ingredients to the dry ingredients. Stir until just combined.
4. Melt a little butter in a heavy pan over medium heat. Pour in the pancake batter (about a 1/4 cup per pancake) into the pan.
5. Cook until bubbles form, about 3 to 4 minutes. Flip and continue to cook another 2 to 3 minutes. Serve with orange slices and syrup.

Whether your kids are home or back in the classroom, we know
coming up with lunch ideas can be tough!

Give this fantastic Chicken Parmesan Panini recipe a try. Make it
with our tender IRVINE’S Chicken Breasts.

INGREDIENTS:
500g IRVINE’S Chicken Breasts, cut in half lengthwise
2 large IRVINE’S Eggs
2 cups bread crumbs
1/4 cup grated Parmesan
2 cups plain flour
Cooking oil, for deep frying
450g mozzarella, sliced
4 rolls, cut in half lengthwise
2 cups pizza sauce
Fresh basil leaves, for garnish
Black pepper and salt, to taste

METHOD:
1. Preheat oven to 180 C. Prepare breading station with 3 large
mixing bowls: one with bread crumbs and Parmesan mixed together, another with eggs beaten with 1 tablespoon water, and
the last with flour. Season chicken with salt and pepper. Coat each piece of chicken in flour and shake off excess, then dip into egg and coat in bread crumbs. Set chicken aside on a plate.

2. In a large pan over medium-high heat add cooking oil. When
pan is hot but not smoking add chicken cutlets. Cook until golden
brown, 1 to 2 minutes on each side. Transfer to a paper towel-lined plate.

3. In a small sauce pan, warm up marinara sauce.

4. Meanwhile, in a rimmed sheet pan lined with parchment paper, place rolls cut-side up. Toast until lightly golden brown, 1 to 2 minutes. Place chicken breasts on bottom halves of rolls and top with mozzarella. Toast again until cheese begins to melt. Add spoonfuls of warm pizza sauce and 3 or 4 fresh basil leaves between the chicken and rolls. Close sandwich and cut in half.
Serve immediately.

Chicken livers are a favourite of health-conscious home cooks and chefs for flavour, quick cooking time, and versatility. Whether you pan fry it or sauté them, our chicken livers do not disappoint!

Make these spicy peri-peri chicken livers recipe today! An ultimate quick and easy meal or snack not forgetting, they are finger licking good.

Ingredients:
1kg Irvine’s Chicken livers
2 tablespoons butter
3-4 tablespoons peri-peri sauce
3 garlic cloves crushed
1/2 cup fresh cream / whipping cream
Juice of 1 lemon
Salt and pepper to taste

Method:
1. Prepare the chicken livers: Heat a large pan over high heat. The pan needs to be very hot to sear the livers and cook them quickly. Trim the livers of any excess fat and pat dry with paper towels.

2. Fry: Add the butter to the pan and add the livers. Allow to brown well on both sides. Do this in batches if your pan isn’t large enough to hold them all at once. You don’t want the livers to be overcrowded as this will result in them steaming instead of searing.

3. Make the pan sauce: Once they are golden brown on both sides, add the peri-peri sauce and garlic. Allow to fry until the garlic is aromatic and the peri-peri sauce starts to dry out then pour in the cream and lemon juice. Season to taste with salt and pepper and allow to simmer for another 5 minutes.

4. Serve: Enjoy with crusty bread to mop up the sauce.
