Moroccan-Spiced Meatballs in Spicy Tomato Sauce
This is a great choice for dinner parties but can also be great for a fancy dinner at home, these rich Moroccan-Spiced Meatballs in Spicy Tomato Sauce pair perfectly with pasta, couscous or rice.
Ingredients:
2 tbsp (30 ml) vegetable oil
1 onion, finely diced
3 cloves garlic, minced
2 tsp (10 ml) paprika
1 tsp (5 ml) fennel seeds, crushed
1 tsp (5 ml) cumin seeds, crushed
1/2 tsp (2 ml) cayenne pepper
1/2 tsp (2 ml) salt
1 pinch saffron threads, (optional)
1 28 oz can (796 ml can) whole tomatoes
Meatballs:
1 small onion, grated
1 egg
1/3 cup (75 ml) bread crumbs
1/3 cup (75 ml) chopped fresh coriander
1/4 cup (60 ml) finely chopped green olives
1 tsp (5 ml) cumin seeds, crushed
1 tsp (5 ml) dried oregano
1/2 tsp (2 ml) salt
1/2 tsp (2 ml) pepper
1/4 tsp (1 ml) cinnamon
1-1/2 lb (680 g) medium ground beef or lean ground beef
2 tbsp (30 ml) vegetable oil
Preparation
In shallow Dutch oven, heat oil over medium-high heat; sauté onion until golden, about 6 minutes.
Add garlic, paprika, fennel seeds, cumin seeds, cayenne pepper, salt, and saffron (if using); cook, stirring, for 2 minutes. Stir in tomatoes, breaking up with spoon. Bring to boil; reduce heat and simmer until thickened slightly, about 1 hour.
Meatballs: Meanwhile, in large bowl, stir together onion, egg, bread crumbs, coriander, olives, cumin seeds, oregano, salt, pepper and cinnamon; mix in beef. Shape by about 2 tbsp (30 mL) into 24 balls.
In large skillet, heat oil over medium-high heat; brown meatballs, in batches and turning often, 8 to 10 minutes.
Drain on paper towel–lined plate. Add meatballs to sauce; simmer for 20 minutes.
Serves: 6
Viazi vya tamu(Sweet potato recipe)
Ingredients:
Sweet potatoes
Coconut milk
Sugar
Cardamom powder
Method:
Wash, peel the sweet potatoes.
Next cut the potatoes into thick slices or pieces and place in a pot.
Next cover the potatoes with coconut milk, add the sugar and cardamom powder.
Add the sugar according to taste.
Place the pot with the ingredients on medium heat stove and cook.
Cook the potatoes until they are soft, if the potatoes are still hard and the coconut milk has reduced almost completely, you can add more coconut milk and continue cooking until they are soft.
Once soft and the coconut milk has reduced, place the sweet potatoes in a serving bowl.
For the coconut sauce:
Take some heavy coconut cream and place it in a small pot.
Cook the coconut cream stirring constantly until it thickens and reduces in size.
Pour the coconut cream over the cooked sweet potatoes.

Recipe for the weekend: Swahili Chicken.
I tried the Swahili Chicken recipe and it was a deliciously satisfying meal. You can serve it with some steamed spinach and leeks to make for a healthy dinner /lunch.For the method you could pan fry or grill it. Another adaption could be to use coconut oil and milk in the marinade to create a thicker sauce. You could also serve with rice or flat bread.For an even better variable you can even serve chilled or warm in a wrap!
Serves 4
Ingredients
1 chicken cut into portions(Full/half bird)
For the marinade
1 thumb sized piece of ginger finely diced
3 cloves of garlic
2 teaspoons turmeric
1 teaspoon smoked paprika
1 tablespoon ground cinnamon
2 tablespoons ground nut oil
2 teaspoons ground coriander
1 teaspoon crushed cumin seeds
1 teaspoon chili powder
1 small pot of natural fat free Greek Yogurt/plain yoghurt
1 tablespoon honey
Salt and Pepper
Method
1. Mix together all the marinade ingredients in a bowl and then smother the chicken portions placing them in an oven proof dish and covering in the fridge overnight.
2. Cook in a preheated oven on 150C for 1 1/2 hours, covering for the last 30 minutes.
3. Serve with steamed spinach and leeks with a little butter and seasoning.

For all you dessert lovers;
Fruit Custard Tartlets.
Ingredients:
150g cake flour
75g desiccated coconut
90g butter
30g castor sugar
1 egg yolk
450ml parmalat dairy custard/or any other custard
fresh fruit
icing sugar(optional)
Process:
Mix the flour ,coconut,butter,castor sugar and egg yolk with your fingers to make a pastry dough.
press the dough into 6 tartlet pans and prick the base with a fork.
Line the pastry cases with foil and blind bake for 10 minutes.
spoon custard into the pastry cases and arrange cut fruit on top.
Refrigerate until ready to serve.
Dust with sieved icing sugar to decorate(optional)
Serves 6.
