HOW TO USE THE THAI RED PASTE

Thai Red Beef Curry
Serves 6 People

1.2 Kgs Cubed beef. (fillet is better)
8 Heaped Tablespoons Thai Red Paste
2 Tin Coconut Cream/milk or 600 Mil Fresh Plain Yoghurt
Salt to Taste
Chilli’s to Taste
Lemon Juice to taste.
Chopped Mint (optional)

Fry the Thai Red Paste on a low heat for a few minutes.

Add the cubed beef and fry for a few minutes til cooked through.

Add the coconut or yoghurt and cook for a few minutes.

Add extras if necessary.

Cook till beef is tender.

💥Billy’s Oxtail Special @ $1495.00 RTGS💥
❗️Come and grab while stocks last ❗️

⛄️Winter warmer ⛄️

🍁Oxtail on Butter Bean Mash🍁

✨The most simple but delicious oxtail recipe✨

Serves 6-8 people

🍁What you need for the oxtail
1.2 kg oxtail
500gm shin
4 medium onions finely chopped
1 tbspn butter
2 oxtail stock cubes
4 tbspn Bisto powder
1 packet brown onion soup powder
1 tspn white pepper
1.5l l boiling water
Salt and pepper to taste

🔪Let’s cook
1. You will need either an Insta-Pot or a cast iron pot for this recipe.
2. Brown your oxtail and shin in your pot and set aside.
3. Brown your onions until soft in the butter.
4. Throw your oxtail and shin into the pot, add your water, white pepper and crumble your stock cubes into the water. (If you are using a cast iron pot add another 500ml of boiling water.)
5. Cook in your Insta-Pot on high for 80 minutes or in your cast iron pot for 8 hours on low.
6. When the cooking is done, take out half of your gravy, and add your Bisto and brown onion gravy powder to your gravy and whisk it to get rid of any lumps.
7. Pour it back into the pot and let it simmer on low for another 15 minutes.
8. Season just before serving.

🍁What you need for the Bean Mash

3-4 cans butter beans, drained and rinsed
OR
You can buy a packet of dried butter beans and follow the instructions on the packet for cooking and deshell the beans.
1 big onion finely chopped
1 tbspn Billy’s garlic
4 tbspn butter
½ cup milk
Salt and pepper to taste

🔪Cooking
1. Melt your butter on low
2. Cook your onions and garlic on low, until your onions are very soft.
3. Add your beans and stir them around until they are coated with the butter
4. Add your milk and salt and pepper
5. Blitz with a hand blitzer
6. If you are not serving straight away you will need more milk to warm it up as it does stiffen.

💫If you have leftover gravy from your oxtail, keep it in the freezer and use it as a soup base for another meal. Add some crispy steamed veg just before serving it. 💫

⚡️Adding shin to this dish, makes the oxtail go further and the shin meat takes the flavor of the oxtail. SHHHHH no one will ever know.⚡️

This daughter of ours knows how to “Shoot up a Graze”. Follow instructions for a fine feed.

Chicken Liver Chow ‼️💯

What you’ll need ♨️

• 500gm chicken livers
• 2 onions chopped 🧅
• 2 cloves garlic 🧄
• 2 cans tomato & onion mix
• 4 tbspn dried mixed herbs
• 4 tbspn Worcestershire sauce
• 2 tbspn paprika
• 3 tbspn chilli sauce (or more if you prefer zesa with your food)🌶🌶🌶
• 4 bay leaves 🍂
• Salt and Pepper to taste
• 2 tbspn olive oil
• ¼ cup cream or yoghurt

1. Brown your livers on a non stick pan and set aside.
2. In a heavy based pot, fry your onions, garlic, dried herbs and chilli sauce for 5 minutes on low.
3. Add your tomato & onion mix, paprika, bay leaves and Worcestershire sauce to the onions. Let simmer on low for 1 hour.
4. Add your yoghurt or cream to the sauce and once all mixed in add your livers and cook for another 10 minutes on low.

Serve with fresh homemade bread if you can or ciabatta 🥖

🥢Sweet and Sour Chicken served with Cauli Fried Rice 🍚

Serves 6️⃣

🔸What you’ll need for the chicken
1 kg 1” cubed chicken breast
1 cup corn flour seasoned with salt and pepper
3 eggs whisked
Oil for deep frying

➡️Put your corn flour in a bowl, your egg in another.
Heat your oil on high heat
Coat your chicken in corn flour then dunk in egg and then a quick fry in the hot oil just to cook the batter golden brown and lay it all in a baking dish (a Pyrex dish works well)

➡️Pour half your sauce over your chicken and bake in the oven for 20-25 minutes turning the chicken in the sauce half way.

🔸For the sauce
200ml brown vinegar
200ml tomato sauce
200gm sugar (or honey)
2 tbspn finely chopped ginger
1 tbspn finely chopped garlic
1 tspn white pepper
1 small chilli if you like 🔥

➡️Heat your sauce ingredients in a pan until sticky, about 5 minutes on high heat.

➡️Heat the other half of your sauce for serving.

🔸What you will need for the Cauli Rice
1 big head of cauliflower grated or lightly blitzed in a food processor
2 tbspn spice for rice
2 cups of blanched chopped mixed veg
2-3 spring onions finely chopped
1 tspn chopped garlic
2 tablespoons olive oil

➡️Fry your garlic and spring onions and throw in your cauliflower and mixed veg with the spice for rice amd give it a few turns in the pan, don’t cook too long so you have some crunch.

💫This recipe works really well with pork collar fillet too 💫

🧆🥬Monday Meatballs🥬 🧆

Lamb Meatballs Stuffed with Halloumi

✅What you need for the meatballs:
1 kg lamb mince
1 onion finely chopped
1 tspn garlic
¼ cup finely chopped fresh mint and parsley
1 egg
¼ cup breadcrumbs
Salt & pepper
2 tablespoons olive oil
1 block of halloumi chopped up

1. Put all of the ingredients in a bowl, leave out the halloumi and olive oil
2. Mix all together
3. Divide the mixture into six equal amounts and make a burger patty shape
4. Add the halloumi to the middle of the patty and fold it in
5. Put them aside whilst making the sauce

✅What you need for the sauce:
1 roughly chopped onion
6 medium tomatoes
Salt and pepper
1 bunch of coriander
1 tspn cumin seeds
1 table spoon oil

1. Blitz your onions, tomatoes and coriander together.
2. Fry your cumin seeds in a heavy based pot.
3. Fry the meatballs until browned all around in the same pot.
4. Add your blitzed sauce to the pot and close the pot and cook on low for 25 minutes, turning the meatballs every 10 minutes.

Lightly pickle thinly sliced cabbage in a vinegar & sugar mix.

🌱Serve with wraps or flat breads, a good tzatziki and your cabbage.

🌶Got too many chillis and limes in the garden and don’t know what to do with them?🌶

Here’s a handy trick to preserve them-

What you need:
A jar
Coarse salt
Chilli
Limes (or lemons if that’s all you can find)

•Layer chilli, then salt, then limes and repeat that until you’re jar is full and with a wooden spoon squash them down until the limes have made some juice.
•Give them a shake every few weeks and you have preserved chillis on hand anytime you need.

⚡️🍋You can do this with just limes and use them in dressings or sauces 🍋⚡️

🍌No flour No sugar Banana muffins 🍌

Ingredients 🍌

1. 4 eggs
2. 1 cap vanilla essence
3. 40ml coconut oil
4. 2 table spoons peanut butter
5. 2 mushed bananas
6. 4 tablespoons honey (or more if you prefer sweeter)
7. ¾ cup desiccated coconut
8. ¾ cup oats
9. ½ cup sweet potato flour
10. Splash milk
11. 2 tablespoons linseeds
12. 2 tespoons chia seeds
13. 1 tablepoon baking powder
14. 1 teaspoon bicarb soda

Method 🍌

-Preheat your oven to 180C
-Grease a medium muffin tray (12 muffins)
• Separate your eggs
• Whisk your egg whites to a soft peak
• In another bowl mix your yolks, peanut butter, honey, oil, essence, milk and then add your mushed bananas.
• Add your dry ingredients to the above mixture and make sure all dry ingredients are mixed in together.
• Fold your egg whites with a wooden spoon into the mixture.
• Fill your muffin tray and bake for 12 minutes.
• Let them cool before taking them out of the tray.

🍒Dates, cranberries, extra nuts & seeds are great to add to these.🍒

💫Once cool store in an airtight container in the fridge to keep for longer 💫

[07/27/20]   To all our valued customers we would like to notify you that one of the senior staff was tested positive for Covid whilst being off. I contacted the leader of Sotzim for advice on the way forward and as per her advice we immediately took our whole workforce including management and security guards for Covid testing. We also got the whole place sanitized and ‘fogged’ as per their recommendations. We have had three of the tests come back positive so those members of staff have been sent home for self isolation. As per protocol those that are tested clear carry on as per ‘ normal’ . We will continue with regular testing as I don’t believe this virus is going anywhere soon.
Please remember that being a butchery everyday every work surface is sanitized as a matter of course. Thanks for being our customers and we would like to assure you that we would never do anything that would endanger any of you. Please remember to wear your mask even if you don’t feel it’s necessary think of the others you come into contact with.
I was sent this very practical and enlightening message this evening that I thought you should all read. 👇👇👇
Finally something practical and honest from Dr. Faheem Younus, the Chief of the Infectious Diseases Clinic, University of Maryland, USA:

1. We may have to live with COVID-19 for months or years. Let's not deny it or panic. Let's not make our lives useless. Let's learn to live with this fact.

2. You can't destroy coronaviruses that have penetrated cell walls, drinking gallons of hot water - you'll just go to the bathroom more often.

3. Washing hands, wearing face mask/face shield and maintaining a two-meter physical distance is the best method for your protection.

4. If you don't have a COVID-19 patient at home, there's no need to disinfect the surfaces at your house.

5. Packaged cargo, gas pumps, shopping carts and ATMs do not cause infection. Wash your hands, live your life as usual.

6. You cannot catch COVID-19 from the packaging of food or from ordering take-out food. COVID-19 is not a food-borne infection like Salmonella. It is a droplet-related infection like the ‘flu. There is no demonstrated risk that C19 is transmitted by food.

7. You can temporarily lose your sense of smell with a lot of allergies and viral infections. It's a non-specific symptom that may or may not happen with COVID-19.

8. Taking hydroxychloroquine and azithromycin preemptively is NOT a good idea to prevent COVID. These experimental drugs for coronavirus should only be used in selected COVID patients. They can sometimes cause fatal heart rhythm problems plus other side effects.

9. Once at home, you don't need to change your clothes urgently and go shower! Cleanliness is a virtue, paranoia isn't! Let's not scare people. Our biggest return on investment is in handwashing, staying 6 feet away from people, avoiding large crowd and wearing face mask.

10. The C19 virus doesn't hang in the air for long. This is a respiratory droplet infection that requires close contact.

11. The air is clean, you can walk through the gardens (just keeping your physical protection distance), through parks.

12. It is sufficient to use normal soap against C19, not antibacterial soap. This is a virus, not a bacteria.

13. You don't have to worry about your food orders. But you can heat it all up in the microwave, if you wish.

14. The chances of bringing C19 home with your shoes is like being struck by lightning twice in a day. I've been working against viruses for 20 years - droplet infections don't spread like that!

15. You can't be protected from the virus by taking vinegar, sugarcane juice and ginger! These are for immunity not a cure.

16. Wearing a mask for long periods interferes with your breathing and oxygen levels. Wear it only in crowds.

17. Wearing face shield is a better option than face mask. It protects the eyes and is less suffocating.

18. Wearing gloves is also a bad idea; the virus can accumulate into the glove and be easily transmitted if you touch your face. Better just to wash your hands regularly.

Immunity is greatly weakened by always staying in a sterile environment. Even if you eat immunity boosting foods, please go out of your house regularly to any park/beach.

Immunity is increased by EXPOSURE TO PATHOGENS, not by sitting at home and consuming fried/spicy/sugary/junk foods and aerated drinks.

Live life sensibly and to the fullest. Be smart and stay informed!

No cheese pesto pasta 🍃

🌿What you need for the pesto
•1 cup baby spinach
•1 cup fresh corriander
•100gm spicy peanuts
•1/4 cup olive oil or blend
•1/4 cup lemon juice
•2 cloves garlic
•Salt and pepper

*Blitz altogether

🍝 What else you need
•4-5 Sundried tomatoes sliced
•Some oil from the sundried tomatoes
•6 deboned and sliced chicken thighs
•1 onion finely chopped
•Cooked pasta of your choice

👩‍🍳 What to do-
-Fry your onion, chicken and Sundried tomatoes in 2 tablespoons of your pesto
-Simmer on low for 20 minutes stirring regularly
-Add another 2 tablespoons of your pesto and toss your pasta in to heat and serve.
-Serve with fresh coriander and sundried tomatoes

⚡️This pesto with a layer of oil over the top lasts for over 2 weeks in the fridge⚡️
