Lemon Garlic Fusilli with Spinach
Ingredients:
300g Primo fusilli pasta
2 tbsp olive oil
4 cloves garlic, minced
Zest and juice of 1 lemon
4 cups baby spinach
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Instructions:
Cook Fusilli: Boil pasta until al dente. Reserve 1/2 cup pasta water and drain.
Prepare Sauce: Heat olive oil in a skillet, sautΓ© garlic for 1 minute, then add lemon zest and juice.
Combine: Toss cooked fusilli and spinach in the skillet until spinach wilts. Add reserved pasta water if needed.
Serve: Season with salt, pepper, and sprinkle with Parmesan cheese. Garnish with extra lemon zest if desired.
