Chef Lizelle and Rudolf went on a bucket list trip to Italy. We asked them how their holiday was going and received several hundred pictures of borlotti beans, Italian Cheese, chilli peppers, Porcini, chanterelles, oyster mushrooms, morels and finally an almost empty espresso martini glass 😂

Our Emu egg and Spirulina hand cut snysels are a component of our fish course.
The hand cut pasta slices are blanched and then sautéed in butter. They are served with the fresh line fish, usually Kabeljou and a creamy white wine sauce. The fish is finished with sautéed wild samphire and dune spinach, pickled mussels and a dusting of dried mussel powder.
A Springbok starter
Springbok boasts a tender and velvety texture and a delicate gamey flavor that reflects the antelope’s natural diet in the South African Karoo.
we serve the fillet in a pepper and Karoo herb crust with roasted beetroot purée, beet kimchi, roasted baby beets and black garlic.

Springbok is naturally flavoured by the small herbaceous bushes that the animals eat in their Karoo habitat.

This dish is an ode to the South African staple…. sweetcorn is celebrated in a variety of forms: mealie risotto with saffron and mealie cream, juiced with amasi, crunchy nibs with burnt butter and smoked paprika, popped corn and a thin maize flour crisp.

celebrate heritage vineyards through their Old Vine Project.
Their 𝗢𝗹𝗱 𝗩𝗶𝗻𝗲 𝗖𝗵𝗲𝗻𝗶𝗻 𝗕𝗹𝗮𝗻𝗰 is one of our favourites. Crafted by Elizma Visser, the intensity and verve of this wine illustrate the enduring value of old vines.

Part two of our staff experience
We visited last week to see this family-owned estate in Stellenbosch. They offer
beautifully crafted wines, delicious lunches and picnics.
Our staff completed a ‘Blind Wine Tasting’ where the wines are kept incognito (notice the black wine glasses!).
We had to discuss and guess before being enlightened. We are delighted to report that several of our staff members are true wine connoisseurs and aced the test!
