Chocolate mocha cake sandwiched with the most delicious mocha swiss meringue buttercream made with the best Belgium Callebaut milk chocolate and a dash of coffee flavour

For my most beautiful daughter's 13th birthday she requested something pink and rose gold.
I made the wafer paper flowers and foliage and have fallen in love with the process and the results.
Inside you will find 7 layers of fudgy chocolate cake with 6 alternating layers of oreo cookies and cream swiss meringue icing and her favorite peanut butter swiss meringue buttercream sprinkled with reese's peanut butter cups! I used a little but of caramel and coffee and cookies and cream flavorings to enhance the deliciousness.
This was a labour of love and I just adore it!

So this guy came to life as a result of lots of firsts - my first time making modeling chocolate, using modeling chocolate, building a gravity defying structure (which collapsed halfway through and I had to restart).

I had fun, but I will have to practice a heck of a lot more!
