Motheba Maketha's easy ice-cream sandwiches 🍦🍪 are a great treat with a caramel filling that offer a balanced sweet and creamy taste 😋

📌INGREDIENTS

188 g flour
1 t bicarbonate of soda
1 t ground cinnamon
½ t salt
220 g brown sugar
50 g white sugar
227 g unsalted butter
2 t vanilla extract
2 free-range eggs
243 g oats
360 g Woolworths
27 % cocoa milk chocolate drops
Woolworths chocolate dairy ice cream, for serving Woolworths Fantastical multi-coloured egg milk chocolate bites, crushed, for serving

📌For the filling, mix:
½ t salt
1 x 360 g can Caramel Treat

📌COOKING INSTRUCTIONS

1. Preheat the oven to 170°C. Sift all the dry ingredients into a bowl, then set aside. Beat the sugar and butter until light and fluffy. Add the vanilla and eggs and mix until well combined.

2. Fold the dry ingredients into the butter mixture, then add the oats and chocolate chips. Allow batter to rest for 1 hour before baking.

3. Weigh out 40 g portions of dough, shape into rounds, then pipe or spoon 1 T Caramel Treat into the centre of each round. Roll the Caramel Treat into the centre of cookie dough before baking. Place on a baking tray and bake for 10–12 minutes.

4. To make the ice-cream sandwiches, place 1–2 scoops ice cream on top of a cookie. Top with a second cookie, squeeze together to form a sandwich, then roll the edge in the crushed Fantastical chocolate bites.

Congratulations to Naidoo Memorial Primary school for winning the Making The Difference Woolies School water hero competition🏆

The Woolies Water Fund is proud to bring clean water to Naidoo Memorial Primary School in Umkomaas. This initiative will benefit over 1 190 learners and staff by providing a consistent water supply for drinking, sanitation, and hygiene.

Through the Woolworths Making the Difference (MTD) educational programme, we've installed two water tanks (20 000L capacity), upgraded roof gutters for better rainwater flow, and added new handwashing stations and filtration systems.

This not only enhances the school’s learning environment but will also help Naidoo Memorial Primary school save on water bills.

This Mandela Day, we’re celebrating the power of giving back 💚

Here at Woolies, 67 projects were nominated by our people to support initiatives they’re passionate about. The Woolworths Trust donated R402 000 towards making a real impact in our communities.

The beneficiary NGOs are far reaching and diverse. From providing meals for under-resourced schools, to donating winter clothing for children who need it most, the funds will also go towards repairing infrastructure at schools and shelters, and ensuring the elderly are looked after. Plus, we’re supporting animal welfare in communities through sterilisation projects and lots more.

As Madiba said, “What counts in life is not the mere fact that we have lived. It is what difference we have made to the lives of others that will determine the significance of the life we lead.” 🇿🇦

Glühwein 🍷 and winter are made for each other. An even better pairing is a glass of Glühwein with these delicious poached pears.

🍽️Serves 6
🥣10 minutes prep time
⏱️1 hour cooking time

📌INGREDIENTS

1 x 750 ml bottle Woolworths Fireside Glühwein
2 Woolworths cinnamon sticks
2 star anise
10 green peppercorns
4 green cardamom pods
1 orange, zested using a vegetable peeler
200 g Woolworths Light Brown Sugar
5 T Woolworths Fynbos Honey
6 Woolworths Forelle Pears, peeled
6 generous scoops Woolworths Extremely Creamy Madagascan Vanilla Dairy Ice Cream, for serving
6 Woolworths Ginger Snaps, crushed, for serving

📌COOKING INSTRUCTIONS

1. Pour the Glühwein into a large saucepan and add the cinnamon, star anise, peppercorns, cardamom, orange zest, sugar and honey.

2. Place over a medium heat and stir until most of the sugar has dissolved, then add the pears. Reduce the heat slightly and cover the pears and poaching liquid with a piece of baking paper, cut to fit the pan like a lid, placing it directly onto the poaching liquid.

3. Slowly poach the pears until tender and they have taken on the colour of the liquid. Remove the pears and increase the heat to reduce the remaining liquid to a thin syrup; this should take about 30 minutes.

4. Divide the crushed biscuits between serving bowls; the crumbs will become the “nest” to hold the ice cream in place. Top the crumbs with a generous scoop of ice cream, then add poached pear and a drizzle of the glaze. Serve any extra glaze on the side.

⏱️2 hours cooking time

📌INGREDIENTS

¼ cup olive oil
200 g diced bacon
2 onions finely sliced
4 cloves garlic finely chopped.
1 head cabbage cored and finely sliced.
4 cups chicken stock
2 cups hot water
150 g rice
Sea salt and freshly ground black pepper, to taste.

📍For the toasted cheese:
250 g mild Cheddar cheese, grated
200 g Kiri Medium Fat Cream Cheese
1 t mustard powder
6 T butter
12 slices Woolworths Bakery Sourdough Bread

📌COOKING INSTRUCTIONS

1. Heat the oil in a large heavy-based saucepan over a medium-low heat. Add the bacon and sauté for 8 minutes or until crispy. Add the onions and cook for 25 minutes, or until soft and golden brown.

2. Add the garlic and cook for 1–2 minutes. Stir through the cabbage, making sure it is well coated, then sauté for 10 minutes or until just wilted. Cover with a lid, reduce the heat to low and steam for 1 hour adding a little water if necessary.

3. Add the stock and water and bring to the boil. Pour in the rice, reduce the heat and simmer for 20–25 minutes, or until cooked through. Adjust the seasoning and keep warm.

4. To make the toasties, mix half the grated cheese, the cream cheese and the mustard powder. Butter the bread on one side only, then turn over. Top the unbuttered sides of 6 slices with the cheese mixture.

5. Heat a large pan and place 2 slices of bread topped with the cheese mixture in the pan. Generously sprinkle a third of the remaining grated cheese over the sandwiches. Some will fall into the pan and form a “skirt” when it melts. Top with another slice of bread, buttered side up, and toast for 2–4 minutes, or until the cheese starts to melt. Carefully loosen the edges of the melted cheese, turn over and toast the other side. Remove and keep warm. Repeat with the remaining bread and cheese.

6. Serve the soup with the toasties on the side.

📌COOKING INSTRUCTIONS

4. Bake for 15 minutes.

📢 Dreamy Dessert Alert!

Can anything be more irresistible than a homemade chocolate fondant, fresh out of the oven with that gooey, molten chocolate center? We don’t think so! 😍

🍽️Makes 8 fondants
🥣10 -12 minutes prep and cooking time

📌INGREDIENTS

100g butter
100g 70% dark chocolate, broken into chunks
2 free range eggs, plus 2 free range egg yolks
100g caster sugar
8t Lindt dark chocolate cocoa spread
75g Flour
Cocoa to dust, optional
Serve with vanilla bean ice cream or any of your liking

📌COOKING INSTRUCTIONS

1. Add the butter and chocolate to a bowl placed over a pot of just simmering water. Gently melt until the butter and chocolate can be stirred together to form a smooth velvety mixture. Remove from the heat and set aside for 5 minutes to cool while preparing the eggs and sugar.

2. Add your eggs and cream together in a separate bowl and whisk together until the mixture becomes pale in colour and almost doubles in size becoming pale and fluffy.

3. Slowly drizzle the chocolate mixture into the beaten eggs, gently stirring and folding to combine before add the flour in 2 parts, making sure to incorporate all the flour without any lumps forming.

4. Prepare your molds or cups by coating it with non-stick kitchen spray. Fill your cups halfway with the chocolate fondant mixture before adding 1 teaspoon of the Lindt spread to the centre, continue to fill your cups with the chocolate fondant batter.

5. In an oven preheated to 160C. Add your cups to a tray and place in the oven for 10 minutes or until the sides have set leaving the centre slightly wobbly. Turn upside down onto a serve dish, releasing the fondant. Dust with cocoa and serve with a large scoop of ice cream.

⏱️1 hour cooking time

📌INGREDIENTS

220 g Woolworths Cake Wheat Flour, plus extra for dusting
1 ½ t Woolworths Baking Powder
Pinch of salt
170 g Woolworths Salted Butter, softened
150 g Woolworths Castor Sugar
2 Woolworths Free Range Large Eggs
¼ cup Woolworths Sour Cream
120ml Woolworths Long Life Full Cream Milk
1 tsp Woolworths Vanilla Essence
125 g CHUCKLES® Malted Puffs in Milk Chocolate, roughly chopped
CHUCKLES® malted icing
60 g Woolworths Salted Butter, softened
260 g Woolworths Icing sugar, sifted
60 g CHUCKLES® Hot Chocolate Powder
1 T milk
⅓ Cup Ayrshire Whipping Cream

📌COOKING INSTRUCTIONS

1. Preheat the oven to 180℃

2. Grease and line a 24 x 14 cm loaf tin with baking paper.

3. Sift together the dry ingredients and set aside.

4. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and castor sugar together until pale and smooth. Add the eggs one by one beating well after each addition.

5. Add the sour cream and vanilla and beat until incorporated. Lastly, add the dry ingredients and the milk, beat to just combine. Fold in the Chuckles® and transfer the batter to the prepared loaf tin.

6. Bake for 1 hour or until a skewer insured comes out clean.

7. Transfer the loaf onto a wire rack and allow to cool in the tin for 10 minutes before removing the cake and allowing it to cool completely.

8. Meanwhile, make the icing by placing the cream and Chuckles® drink into a small saucepan and place over low heat. Stir until the sugar in the Chuckles malt drink has dissolved. Set aside to cool.

9. Place the butter, milk and icing sugar into a bowl and using a hand be**er, cream until smooth and pale. Add the cooled cream mixture to the butter and sugar and beat until incorporated.

10. Once the loaf cake is cooled, transfer to a serving plate and decorate the top of the cake with the icing, finish off with more Chuckles® if you like.

11. Serve with a mug of hot Chuckles® Chocolate and Malt Drink.

Want a warm aromatic lentil soup that warms the soul?
Abi's dhal soup will definitely hit the spot 🍲 She serves it up with chickpea flour dumplings to make it more special.

📌INGREDIENTS

2 T olive oil
1 T butter
1 onion, finely chopped
1 t garlic, finely chopped
1 t green chilli, finely chopped
1 t fresh ginger, finely grated
2 t fresh turmeric, finely grated
1 T Woolworths medium curry powder
1 T garam masala4 cups vegetable stock
250 g split red lentils
1 coriander, bunch

📍For the dumplings:
150 g chickpea flour
1 t baking powder
1 T cornflour
1 red chilli, seeded and finely chopped
1 green chilli, seeded and finely chopped
½ onion, finely diced
¼ cup olive oil
1/3 cup plain yoghurt
1 t salt

📌COOKING INSTRUCTIONS

1. Place the oil and tomatoes in a large saucepan and bring to a simmer. Cook for 20–30 minutes, or until the tomatoes are blistered. Remove from the pan and set aside.

2. Add the butter and onion to the same pan and cook over a medium heat until the onions are soft. Add the garlic, chilli, ginger, turmeric and spices and cook for 3 minutes.

3. Add the cooked tomatoes, stock and lentils and bring to the boil. Cook until the lentils are plump and soft.

4. To make the dumplings, mix all the ingredients expect the yoghurt. Make a well and add the yoghurt. Whisk together until well incorporated.

5. Spoon dollops of the mixture into the simmering soup and cook for 5 minutes. Serve immediately garnished with coriander.

There’s no need for the oven for this classic. Layers of nacho chips and smoky chicken 🍗in a tangy sauce are covered in mozzarella and cooked in the air-fryer until melted and golden.

📌INGREDIENTS

3 T canola oil
1 onion, halved and thinly sliced
Sea salt and freshly ground black pepper, to taste
4 cloves garlic, finely grated or chopped
400 g Woolworths free-range smoked chicken breasts
2 jalapeno chillies, thinly sliced, plus extra to garnish
1 x 400 g can Woolworths Mexican-style tomato-and-chipotle soup
250 g Woolworths salted nacho chips
200 g Woolworths grated mozzarella cheese
1 ripe avocado, cut into chunks
1 cup sour cream
10 g coriander, roughly chopped
1 –2 limes, zested and cut into wedges, for serving

📌COOKING INSTRUCTIONS

1. Heat the oil in a pan over a medium heat, add the onion and season lightly with salt. Cook until the onion is soft and just taking on some colour. Add the garlic and cook for 1 minute.

2. While the garlic and onions are cooking, cut the chicken into small chunks and add to the pan. Add the jalapenos and combine, then cook for 5 minutes.

3. Pour in the soup cook until slightly reduced so that it’s more of a sauce than a soup. This should take about 10 minutes. Season to taste once reduced.

4. Line an air-fryer with a liner, then add some of the nacho chips, sauce, chicken and cheese. Repeat until all the ingredients are used or until the air-fryer basket is full. Place in the air-fryer and cook for 10 minutes, or until the cheese has melted. Carefully lift the liner from the basket and place on a platter.

5. Top the nachos with the avocado, sour cream, coriander, jalapenos and lime zest. Serve the lime wedges on the side.

Juice 1 lemon
1 cup Woolworths Canola Oil

📌COOKING INSTRUCTIONS

1. To make the confit tomatoes, preheat the oven to 110℃.
Wash and dry all the tomatoes.

2. Place the tomatoes and the garlic halves in a large ovenproof dish and pour over the olive oil. Scatter with the herbs, ClemenGold® peel, sugar and salt, toss to coat and place in the oven for 2 and a half hours, tossing them every 30 minutes.

3. Remove from the oven and allow to cool. Store in an airtight container in the fridge for up to 1 month.

To make the balsamic aioli, place the egg yolk, Dijon mustard, garlic and balsamic vinegar in a stick blender jug and blend until creamy and combined, while the stick blender is running, slowly add the canola oil in a thin stream and blend until a thick, creamy mayo is achieved. Add the lemon juice and salt to taste.

The ambitious leader behind Agrikey Farming, a mixed farm specialising in poultry and vegetables, based in Mfuleni, Cape Town. Originally from the Eastern Cape, Khaya’s passion for agriculture goes as far back as he can remember.

Khaya was selected as one of winners for our Youth Makers competition, designed to support and empower youth owned businesses.

Agrikey Farming has expanded its product range to organic vegetables with a vision to extend the business to Agri-processing, packaging and distribution to retailers across the country and continent.

Outside of his commercial goals, Khaya focuses on educating the community, especially children, about agriculture to address existing food insecurity issues. Agrikey has working relationships with five schools, with strong aspirations to grow. The business teaches kids about food production while also providing schools with seedlings and training to equip them with the skills to develop their own backyard gardens.

Warm focaccia, crispy, tender chicken schnitzel and all the trimmings needed to make this your new fave sandwich 🥪

🍽️Serves 4
🥣20 minutes prep time
⏱️40 minutes cooking time

📌INGREDIENTS

300g Woolworths Cherry Tomatoes
1 bulb Garlic
Woolworths Mediterranean Extra Virgin Olive Oil, to coat
Salt and freshly ground black pepper, to taste
700 g Woolworths Crumbed Chicken Schnitzel
Woolworths Heat & Eat Foccacia
125 g Woolworths Basil Pesto
150 g Woolworths Fresh Ayrshire Fior Di Latte Mozzarella Cheese, sliced

📌COOKING INSTRUCTIONS

1. Preheat the oven to 180°C. Using foil, create a pouch that will be able to completely seal. Add the whole bulb of garlic, cherry tomatoes and some olive oil to the pouch, along with salt and pepper to season. Ensure all sides of the pouch are sealed, then place in the oven to roast for 20 minutes, or until the garlic is soft. Remove from the oven and set aside.

(The garlic will get covered in some of the tomato juice, but that’s ok.)

2. Add the tomato and garlic to a mixing bowl. Once cool enough, squeeze the garlic into the bowl and mash with the tomatoes using the back of a fork. Season with extra salt and freshly ground black pepper, to taste.

3. Place the schnitzel on a baking tray and cook in the oven for 15 minutes. Remove from the oven and turn over, topping the schnitzel with the slices of mozzarella, and returning it to the oven to continue cooking for another 5 minutes, or until the cheese has perfectly melted.

4. While the schnitzels are cooking, separate the top and bottom of the focaccia and drizzle over olive oil before placing in the oven for a few minutes to toast.

5. Spread the roasted tomatoes over the base of the focaccia and drizzle with the balsamic crema, followed by the cheesy schnitzel and the rocket. Spread the pesto over the remaining piece of focaccia before topping the sandwich. Cut into portions and serve.

Indulge in this chocolate banana bread 🍌🍞 with all-time great flavour combinations!

📌INGREDIENTS

155 g cake flour
16 g cornflour
1 t baking powder
¾ t bicarbonate of soda
½ t salt
35 g cocoa powder
150 g sugar
3 T vegetable oil
56 g unsalted butter, at room temperature
1 large free-range egg
1½ t vanilla extract
3 medium banana
170 g dark chocolate chips

📍For the custard:
2 cups milk
2 cups cream
8 free-range egg yolks
260 g caster sugar
1 t vanilla extract
2 T instant custard powder

📌COOKING INSTRUCTIONS

1. Preheat the oven to 160°C. Sift all the dry ingredients together.

2. Using a stand mixer, whisk the sugar, butter and oil together until light and fluffy, then add the egg and vanilla. Stir in the bananas and chocolate chips. Fold in the dry ingredients and pour into a greased 18 - 20 cm loaf tin. Bake for 1 hour, or until a skewer comes out clean.

3. To make the custard, heat the milk and cream together in a saucepan. In a bowl, whisk together the egg yolks, sugar, vanilla and custard powder.

4. Gradually add the hot cream to the egg mixture – don’t add it all at once or the eggs will scramble. Return to the heat and stir until the custard thickens and coats the back of the spoon.

5. Serve the banana bread with the custard.
