Who doesn't love peanut butter right!
Holidays are the perfect time to bake so try out this Black Cat Peanut Butter bran muffin recipe.

1 kg Golden Cloud Bran Muffin Mix
2 apples, grated
For the filling and topping:
All Gold mixed fruit jam
50 g Jungle granola
Black Cat Peanut Butter

1. Prepare bran muffins as directed on packet. If desired, add grated apple to mixture.

2. Once muffins are baked, use an apple corer or round side of a piping nozzle to make a small hole for the filling. Fill the hole with the mixed fruit jam. Place peanut butter in piping bag with your favourite nozzle and pipe a nest around the jam filling. Sprinkle with granola for garnish.

🌶Spicy Baked Beans - The South African version
We love these spicy baked beans from @confessionsfromahungrywoman, which have a great South African twist to them.

Sunflower Oil 4 T
Large Onion 1 finely chopped
ginger 1 T crushed
garlic 1 T crushed
Fresh Coriander 30g Chopped
Cape Malay curry powder 2 T
Green Chillies 2 finely chopped
Baked beans in tomato sauce 2 x 400g tins
Tomato paste 6 T
Salt to tast

1. Braise the onion in the oil over medium heat. Add the ginger and garlic. Once the onion has turned a light brown colour, add the coriander, curry powder and chillies and cook for a further 2-3 minutes.
2. Add the baked beans and tomato paste and cook until the beans have heated through. Sprinkle with salt. Serve hot on toasted sourdough and top with a soft fried egg and crispy bacon.

It's MEATBALL DAY today, so what a great excuse to make good old favourite spaghetti & meatballs 🍝

🏷 Craft Tomato & Onion mix 410g R11.99
🏷 Pomdoro Whole peeled tomatoes 400g R12.99
🏷 Divella Spaghetti R17.90

12 cream crackers
4 sprigs of fresh rosemary
2 heaped teaspoons Dijon mustard
500 g quality minced beef, pork, or a mixture of the two
1 heaped tablespoon dried oregano
1 large free-range egg
olive oil
1 bunch of fresh basil
1 medium onion
2 cloves of garlic
½ a fresh or dried red chilli
2 x 400 g tin of plum tomatoes
2 tablespoons balsamic vinegar
400 g dried spaghetti or penne
Parmesan cheese

🍝Wrap the crackers in a tea towel and smash up until fine, breaking up any big bits with your hands, then tip into a large bowl.
🍝Pick and finely chop the rosemary, then add to the bowl with the mustard, minced meat and oregano.
🍝Crack the egg into the bowl, then add a good pinch of sea salt and black pepper.
🍝With clean hands, scrunch and mix everything up well. Divide into 4 large and balls, then with wet hands divide each ball into 6 and roll into little meatballs – you should end up with 24.
🍝Place the meatballs onto a plate, drizzle with oil and jiggle about to coat, then cover and place in the fridge until needed – this will help to firm them up.
🍝Pick the basil leaves, keeping any smaller ones to one side for later. Peel and finely chop the onion and the garlic, and trim and finely slice or crumble the chilli.
🍝Heat 2 tablespoons of oil in a large frying pan over a medium heat, add the onion and cook for 7 minutes, or until softened and lightly golden.
🍝Add the garlic and chilli, and as soon as they start to get some colour add the large basil leaves.
🍝Tip in the the tomatoes, breaking them up with the back of a spoon, then add the balsamic vinegar, and season to taste. Bring to the boil, then reduce to a simmer until needed, stirring regularly.
🍝Meanwhile, heat 1 tablespoon of oil in another large frying pan over a medium heat, add the meatballs and cook for 8 to 10 minutes, or until cooked through, turning regularly To check if they’re cooked, cut one opening – there should be no sign of pink.
🍝Once cooked, add the meatballs to the sauce and simmer while you cook the pasta.
🍝Cook the pasta in boiling salted water according to the packet instructions, then drain, reserving a mugful of cooking water. Return the pasta to the pan.
🍝Spoon half the tomato sauce over the pasta and toss together, adding a little splash of reserved cooking water to loosen, if needed
🍝Transfer to a large platter or divide between bowls, serving the remaining sauce and meatballs on top. Add a fine grating of Parmesan and scatter over the reserved basil, then tuck in.

Designed and baked by our resident baker, Nikki, using Sugar & Crafts Premium RTR Fondant.

In every South African’s life, they will make the announcement “this is pancake weather”. This means the skies are gloomy, perhaps it’s raining. Above all, the weather has dictated the need for comfort food. Today is no exception.

Here is the perfect recipe for the South African Pannekoek:
240 grams flour 2 cups
600 ml milk 2⅓ cups
30 ml vegetable oil 2 tbsp
½ teaspoon salt
Cinnamon Sugar
½ cup brown or caster sugar
2 teaspoon ground cinnamon
2 eggs
Beat together the eggs, milk and salt until well combined.
Sift the flour into a large bowl.
Slowly add the milk mixture to the flour, whisking to prevent any clumps from forming.
OR - place all the ingredients into a blender and blitz together until a thin smooth batter has formed.
Allow the pancake mixture to rest for 30 minutes.
Stir through the batter, if it has thickened up, add some more milk until the batter is back to its pouring consistency.
Heat a non-stick 30cm frying pan over low to medium heat. Using a ⅓ cup measurer, pour the batter into the centre of the pan, spreading it to the edges.
Cook on one side until the batter has just become solid, then flip over for another 30 seconds to a minute.
Serve the pancakes with a cinnamon sugar mixture or your favourite filling.

Today is Banana Bread day! 🍌.
National Banana Bread Day celebrates a perfect pairing of fruit plus bread. Admit it, few things are quite as comforting as walking into the house and smelling a freshly baked loaf of banana bread.
Pop into SOCA Foods today and enjoy some freshly baked Banana Bread by our resident baker, Nikki.

Give this recipe a go over the weekend too. The Perfect Banana Bread by Drizzle & Dip.

4 very ripe/overripe bananas (380gms)
4 large free-range eggs
2 Tbsp milk (any kind)
½ cup sunflower oil or other neutral oil
1/2 cup coconut sugar or brown sugar (muscovado / Demerara)
2 cups flour (I weighed out 290gms)
2 tsp (8gm) baking powder
¼ tsp (1gm) baking soda
1 tsp salt (yip, a whole teaspoon of table salt)
2 - 3Tbsp coconut sugar (or 2 Tbsp regular dark brown sugar of your choice)
a handful of walnuts, roughly chopped (a little more than ¼ cup)

Preheat the oven to 180C / 350F and line a medium sized loaf tin with parchment paper.
In a large bowl whisk the bananas until soft (this will happen easily), then add the eggs, milk, oil and sugar. Whisk until well combined.
Sift the flour, baking powder, baking soda and salt into the wet mixture and gently fold until its incorporated.
Empty this into the lined baking tin and top with the additional sugar, chopped walnuts and sea salt flakes. Bake for 45 – 55 minutes until golden and baked through. To test if it’s done, insert a sharp knife into the thickest part of the loaf and if it comes out clean it's done. If necessary, loosely cover the loaf with tin foil from about halfway through to prevent over browning.
Allow this to cool in the tin for a while and then remove to cool on a wrack.
