Ingredients:

Greek yogurt (plain or flavored, your choice)
Fresh berries (such as strawberries, blueberries, or raspberries)
Granola
Honey (optional)
Instructions:

In a glass or bowl, start by layering Greek yogurt at the bottom.
Add a layer of fresh berries on top of the yogurt.
Sprinkle a layer of granola over the berries.
Repeat the layers until you reach the top of the glass or bowl.
If desired, drizzle a little honey over the top for added sweetness.

Ingredients:
1 cup quinoa, rinsed
2 cups water or vegetable broth
2 tablespoons soy sauce or tamari
2 tablespoons sesame oil, divided
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 bell pepper, sliced
1 cup broccoli florets
1 carrot, julienned
1/2 cup snow peas, trimmed
1 cup sliced mushrooms (optional)
2 green onions, sliced
Sesame seeds, for garnish (optional)
Salt and pepper, to taste
Instructions:
Cook the quinoa: In a medium saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
Prepare the stir-fry: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add minced garlic and ginger, and cook for 1 minute until fragrant.
Stir-fry the vegetables: Add sliced bell pepper, broccoli florets, julienned carrot, snow peas, and sliced mushrooms (if using) to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.
