HEALTHY CHICKEN THIGHS with MANGO AVOCADO SALSA 🍗🥭🥑🌾🍚

Ingredients (4 servings):
CHICKEN + MARINADE
1.5 lbs of boneless, skinless chicken thighs
2 limes, juiced
1/2 cup low sodium soy sauce
2 tbsp honey
2 tablespoons fresh garlic
1/2 cup plain greek yogurt
MANGO AVOCADO SALSA
1 english cucumber, diced (I peeled mine)
3 fresh green onions, diced
1 cup of mango, diced ( has the best pre-sliced mango in the fruit & veggie refrigerator section)
1 large avocado, diced
1/2 cup of fresh cilantro, finely chopped
1 lime, juiced
2 tbsp red wine vinegar
Salt, pepper, and seasonings to taste
Organic Cilantro Lime Rice (I get mine at )
Directions:
- Add chicken thighs to a baking dish or any container where they can marinate. Add all listed marinade ingredients to a mixing cup and then pour over the chicken. I let the chicken marinate for a minimum of 4 hours (sometimes even overnight), but do what time allows.
- In a large bowl, make the salsa using the ingredients listed above. If you prep the salsa ahead of time, do NOT add the avocado. Wait until you are ready to serve before adding the avocado.
- Set the air fryer to 390°, add to the bottom of the air fryer, and place the chicken in a single layer. Cook for 25 minutes, flipping halfway through is optional. If you flip the chicken, brush it with the marinade.
- Once the chicken is done, assemble the bowls with the rice, chicken, and salsa on top!

The end of the year brings a mix of pride, relief, and a touch of nostalgia — no matter what stage my kids are in. It’s incredible to see how much they’ve learned and grown. They’ve gone from teary-eyed, shy drop-offs to confidently walking in on their own. They're big milestones, even if they sneak up on us (which the end seems to come faster every year). 🥹
The elementary years are full of firsts - friendships, school projects, field trips - and I'm so grateful how much I get to step foot on their campus to be a part of it a lot with them, but also letting them become their own person without me. And with each grade, I see their confidence building. But it’s also a reminder that time is fleeting, and they’re not quite as little as they used to be. 😭
The end of the school year can feel like closing a chapter while already peeking into the next one as they are already wondering who their next teacher will be. Today at Crew's Pre-K graduation while I watched a slideshow, I had chance to pause, reflect, and appreciate how far they’ve come - and how much we’ve all grown. I've grown so much this year as a mother with them, and I'm so grateful for all of the experiences. I just really wish time would slow down. 🥹♥️😭

Cheesy Mexican Bites! 🤤 With just a few ingredients and a few minutes to prep, you will have the yummiest bite-sized appetizer for any get-together!
Ingredients:
- 1 bag tortilla chip scoops
- 1 cup sweet corn
- 1 cup seasoned black beans
- 8 oz Cream Cheese room temperature
- 1 Egg
- 1 cup of shredded Mexican cheese
- 2 Fresh Jalapenos
- 1 bunch of Fresh Cilantro
Instructions:
Preheat the oven to 350ºF. Then, in a mixing bowl, combine the room-temperature cream cheese, shredded Mexican cheese, and 1 egg, black beans, frozen corn and mix.
Line a cooking sheet with parchment paper and spread approximately 30-35 tortilla chips scoops on top.
Fill each chip scoop with 1-2 teaspoons of the cream cheese mixture. Bake for 10-15 minutes until golden brown.
Add a sliced fresh jalapeño and cilantro!
