Grilled mahi mahi paired with sautéed squash and zucchini, with homemade chow chow.
Prep time 10 minutes. Cooking time 11 minutes.

Grilled chili lime chicken
Brine your chicken, as always, overnight or at least a few hours.
My chili lime seasoning is easy and can be used with fish and shrimp aswell.
I make a big batch and store for later use.
1/2 cup old bay, 2 tbls chili powder, 2tbls seasalt, 2 limes zested. Save the limes for juice while cooking.
I cut these chicken breast in half for shorter cooking time. Toss in lite olive oil, 1 lime juiced, and season. Grill on high (400°) for 15 minutes. Add some fresh cut pineapple and boom you have a family favorite.
Grilled chicken alfredo
Again I must stress the importance of brineing your chicken. Start by soaking your chicken in salt water overnight or for at least a few hours. This allows your chicken to remain juicy cooking at high heat.
After draining the water drizzle just a bit of olive oil and toss your chicken so your seasonings stick well.
I used Italian seasoning, old bay, salt, and pepper.
Cook on high (400°) for 22 minutes, flipping over halfway. The last 5 minutes I put in the broccoli (tossed with light olive oil, salt, and pepper). Tonight we used the primal kitchen non dairy alferdo sauce highly recommend.
All in all very easy and amazingly delicious dish.
Instantpot BBQ Chicken
The key to this is brineing your chicken. I just use salt water at home and let the chicken breast soak for a few hours in the fridge beforehand.
Start cooking with a little olive oil on saute mode. Add diced onion and minced garlic once the oil is hot. Wait till caramelized. Then add your chicken breast (3 feeds my family of 4).
Add chicken stock just enough to leave the chicken breast still exposed on top.
Now spices. I use garlic powder, onion powder, cumin, chili powder, ground ginger (secret ingredient), paprika, and salt and pepper. Just sprinkle each over the top of the breasts. Then add just a splash of BBQ sauce. Cover and cook on high for about 20 minutes.
Once cooking is finished use 2 forks to shred the chicken; add a little more BBQ sauce on the plate and you're done.
This is an absolute staple in our household. Quick, easy, and delicious.
Aluminum pouch Brussels.
Easiest way I've found to cook Brussel sprouts. Simply delicious.
Start by getting 2 pieces of foil and wash the brussels.
I prefer to use a bowl where the brussels are fully emerged in water and let them soak for a few minutes.
Trim the bottoms and discard any loose leaves.
Back to the bowl. Roll the brussels in a small amount of olive oil so the seasonings stick well. Sprinkle salt, pepper, garlic powder, and onion powder to taste. (You can add any seasonings you prefer)
Lay them out on one piece of foil and top with the other. Fold the sides creating the pouch.
Place pouch in a grill at 400 (or high if your using a ninja foodie like me.)
Cook for 20 to 30 minutes.
Unfold your pouch and boom you're done. Delicious and easy perfect side for many dishes.

As a busy chef dad I know dinners can be a hassle. I'm hoping to inspire you to cook for your family. I'll be posting different ideas and creations; some simple and some a bit more complex. Everything I post will be tasted and kiddo approved.
