Happy father’s day, dad! Growing up under working class parents in 80’s Korea, I don’t really got to know my dad. I mean he always came home late at night from work and gone to work by the time I was up. I knew more about Homer Simpson than my own dad. All I knew was that he smokes heavily and drinking soju every night. And I hated him for that. I never really knew who he was. Or maybe I never tried to know. As I grew older, having my own family, working and grinding to position my family’s life better, I slowly understood him. He was just doing what Im doing right now. Working and grinding hard ‘til he burns out every night for betterment of his family. I actually don’t even know what food he likes (and I call myself a chef!). And I don’t remember last time when I told him that I love him. I gotta call him today.

Cold noodle Makooksoo is going through little change soon. Instead of buckwheat noodle, we are testing out to see how Acorn Noodle can improve what we think is excellent product already. Stand by please.

One day, I got a call enquiring about cooking for a commercial. Sure, good money! I had to come up with fancy Ramyeun dish that actress will pretend that she cooked it while she camps there. So, me and my then sous chef Kyle went to Grouse Mountain to cook Lobster Ramyeun (plus more food for film staffs there). We ended up putting that on the menu later, because she happens to be quite famous k-pop actress/singer. Well… we took off the lobster from there, because I didn’t think charging $50 for ramyuen makes sense. Thanks Suzy. #수지 #라면

Makooksoo Cold Noodle (막국수) we serve at Oiso is something from my childhood memories. When I was about 9-10yrs old, every weekend, my parents drove everywhere with this Car Magazine that recommends good restaurants around Korea. So, we went to this Makooksoo restaurant out of nowhere. Well…It wasn’t really a restaurant, but a old house with couple of big commuter tables. I still remember them cooking with wood fire, dogs running around tables, birds flying around because they had nest under their roof. No menu, everyone’s getting same thing. Then this Makooksoo cold noodle came. Bam!!! It was life altering good that it engraved into my taste memory. Here I am today, that life altering Makooksoo has been very closely duplicated at Oiso. Try one. Maybe it won’t alter your life, but it’s still pretty damn good (and cold).

So, it was year 2011. When one of my, born in Columbia raised in Mexico by Korean parents, cook Sic Kim, brought all his Mexican pantry ingredients to Damso to feast together for staff meal, we knew what to put on the menu next day. It became staple repertoire on my menu. Thanks Sic, you will get free life time supply of Korean Taco.

I introduced Seafood Waffle back in 2011 at Damso on Denman St. Back then alot of people told me it’s stupid idea. I had to take it off from the menu, because it wasn’t selling. 13 years fast forward to today, we sell out more often than anything on the menu. People just can’t have it enough. Time changes.
