Manakeesh or in Arabic it is also called fatayer...is an Arabic flatbread, topped with a variety of toppings, like za'atar ( dried thyme mixture ), cheese and meat. It's quite similar to a pizza...but has a very distinct flavor of it's own. It is usually served for breakfast. But a piece of freshly baked jibna ( cheese bread ) or za'atar, tastes divine with a hot cup of evening tea as well.

*BERRIES AND RICOTTA POUND CAKE*

I had a small tub of ricotta cheese lying around in the refrigerator for quite sometime and didn't know what to do with it. Then I came across this berry Ricotta pound cake recipe, which seemed quite easy, so I thought of giving it a try and the result was amazing. It turned out to be such a dense yet soft and a moist cake, bursting with the freshness of berries. I adjusted the recipe a little bit according to the ingredients I had and as per my liking.
It's a very simple recipe, do give it a try!

*INGREDIENTS:*
250 gms of ricotta cheese,
3 large eggs,
1 cup sugar,
110 gms butter,
1 cup mixed berries,
1tsp vanilla extract,
1 and a half cup of all purpose flour,
1tbsp baking powder.

*How to make*
Beat the sugar and butter together, add the cheese and beat well, add eggs and beat until well incorporated, fold in the flour and baking powder, mix in the berries, transfer the batter to a buttered and floured loaf pan. Bake in a pre heated oven at 350°F ( 180°C ) for 50-55 minutes or until a tester comes out clean.

P.S. This is not a cherry cake. There were no more berries left so i used cherries for garnish. But it doesn't matter at all, you can use either berries or cherries and it'll turn out equally good I am sure.

This is a very easy version of Chicken Alfredo pasta. It is one of our family's favorite weekend dinners. This recipe goes well with any type of pasta. I've used large ribbed macaroni (Rigatoni - I think! Still working on my pasta knowledge. 😃) here. The assorted vegetables add a delightful crunch and flavor along with a fresh burst of colour to our Alfredo pasta. A nice home made chicken broth enhances the flavour of the sauce.
No flour needed, the sauce thickens on it's own, within a few minutes after adding the pasta. Parmesan cheese renders a richness to the dish. Try adding it to your pasta in the end, for that burst of umami deliciousness.
It's a must try recipe, for all the pasta lovers. You can adjust the ingredients according to your liking.
Note: If the sauce seems too thick, you can loosen it up, with the reserved boiled pasta water or some more milk and cream.
