Collagen Zucchini Muffins

INGREDIENTS
6 medium eggs, if large reduce to 5 eggs
1/4 cup ghee, melted
2 tablespoons coconut oil, melted
1 banana, mashed
1 cup almond flour
2 tablespoons coconut flour
1.5 scoops Misspep Collagen Peptides
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 tablespoon almond extract
1 cup packed grated zucchini
INSTRUCTIONS
1.Preheat oven to 375 degrees F.
2.Whisk eggs, allow ghee and coconut oil to cool to just warm and incorporate into the eggs with whisk. Then mix in mashed banana.
3.In a separate bowl mix almond flour, coconut flour, collagen, baking soda, cinnamon.
4.Add the dry ingredients to the wet ingredient bowl and stir until combined and add almond extract.
5.Press out remaining water from shredded zucchini by pressing in cheese cloth or towel. Then fold zucchini into the muffin mixture and scoop ⅛ cup portions into lined muffin tins.
6.Bake for 25 minutes.

How is serotonin made and where do you get it from?
The body has no way to naturally produce serotonin, so therefore it is synthesised through amino acids consumed. 5-HT is derived from the amino acid L-Tryptophan through a process of hydration via the enzyme L-tryptophan hydroxylase and then naturally undergoes a decarboxylation process (the body forms carbon dioxide and water) to create serotonin.

Where do you find serotonin?
There is a lot of serotonin stored in the enterochromaffin cells found in the tissue around the gastrointestinal tract (GIT). In the gut about 90% of it is synthesised and stored while some is also stored in and travels in blood platelets. The other 10% is found in the brain stem where it is produced in the raphe nuclei and stored there in vesicles as it awaits release.

1/2 cup organic berry juice of choice
1 cup organic coconut milk
1/2 cup blueberries
1/2 cup black cherries (pitted)
2 tablespoons, raw unfiltered honey
1 scoop Misspep Collagen
*Make sure to add the honey because it is necessary to keep the popsicles from becoming too icy.
INSTRUCTIONS
1.Wash and prep all fresh ingredients. Pit the cherries.
2.Add all ingredients into a high-speed blender. I used my NutriBullet.
3.Blend to your desired consistency. I like having some visible fruit pieces.
4.Once ready, pour into popsicle molds and freeze until solid. Enjoy.

A few splashes of almond milk
INSTRUCTIONS
1.Melt coconut oil in a bowl, add the carob powder, MCT oil, and vanilla drops, and mix until smooth.
2.In a separate bowl, mix together the shredded coconut, coconut flour, and collagen peptides, using just enough almond milk to create a paste consistency.
3.Make enough little disks with this mixture to have inside your cups.

There are two major types of adipose(fat) tissue with different locations, structures, colors, and functions.

White adipose tissue, the more common type specialized for fat storage, consists of cells each containing one large cytoplasmic droplet of whitish-yellow fat.

Brown adipose tissue contains cells with multiple lipid droplets interspersed among abundant mitochondria, which helps give this tissue a darker appearance. Brown adipocytes release heat and function to warm the blood.

Both types of adipose tissue have a rich blood supply and the adipocytes, unlike other cells of connective tissue proper, are individually surrounded by a thin external lamina containing type IV collagen.

Depending on what you're making, choose unsweetened or sweetened shredded coconut. This will of course dictate the nutrition profile, but provides additional ways to use--in savory and sweet dishes. 1 ounce/1 serving contains 128 calories, 0.9 g of protein, 14.5 g of carbohydrates, 7.8 g of total fat, and 7.4 g of saturated fat. Both types of coconut are very high in saturated fat, with the unsweetened coconut providing 80% of the daily value (DV) and one ounce of sweetened coconut providing 37% DV per ounce. A high consumption of saturated fat can increase risk for obesity, high cholesterol and heart disease. Coconut flour comes from dried, defatted coconut meat and is rich in fiber and low in digestible carbohydrates. One serving, which is 2 tablespoons, provides 5 g fiber and 8 g carbohydrates. As a wheat free alternative, coconut flour can replace up to 20% of flour in a recipe, but an equal amount of liquid will be needed as well. With its high fiber content, coconut flour doesn't raise blood sugar levels as quickly as other grain based flours.

COCONUT SQUASH PANCAKES
Prep Time:15 minutes
Cook Time:40 minutes
Servings:4
INGREDIENTS
1-2 whole delicata squash (enough for 1 cup after roasted and mashed)
2 scoops Misspep Collagen Peptides
2 tablespoons shredded coconut
2 tablespoons coconut flour
1/2 teaspoon baking soda
4 eggs
1 teaspoon vanilla extract
1 tablespoon almond milk
INSTRUCTIONS
1.Slice your delicata squash into even slices and remove all seeds. Roast at 375 °F for about 15-20 minutes depending on how thick you sliced it (ready once soft and fork easily goes into center).
2.Once squash cools, peel off the skin and mash with a fork.
3.Measure 1 cup of the mashed delicata squash and mix with all other ingredients.
4.Spray a non-stick pan with coconut oil and pre-heat over low-medium heat.
5.Using ¼ cup measuring cup, scoop batter onto hot pan. Flip pancake once you start to see bubbles in the center.
6.Repeat step 5 with all the batter.
7.(optional) Melt coconut butter over the stove top and drizzle on top of pancakes.
