I can’t say enough about my Lodge Cast Iron Skillet. Honestly, everything tastes better when I cook with it. Whether stir fried veggies, stove top to oven dishes (see my ridiculously simple chicken fajitas recipe), braised dishes like chicken cacciatore or gluten free natural sugar cakes - it does it all.

Unfortunately, I didn’t always feel this way or use it often. I made the mistake of letting a new skillet develop rust spots years ago when I left water in the pan to soak. Big mistake. As a result I got rid of the pan and decided it just wasn’t my thing.

So after being encouraged by a friend who loves her cast iron skillet, I decided to give it a try again. Boy am I glad I did!

To keep my skillet in tip top shape, I clean it the second I’m finished using it - usually while it’s still hot - then I add about a tablespoon of olive oil to the pan and rub it in with a paper towel. I’ve noticed the coating is getting better and better and more seasoned. It doesn’t seem to be as prone to rust if I keep water in it a little too long.

Ridiculously Simple Chicken Fajitas

1 lb Boneless Chicken Breasts
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp cumin
Salt & Pepper to taste
Olive Oil
2 T chopped fresh cilantro
Juice of 1 lime

Preheat oven to 400 degrees
1. Mix seasonings in a bowl. Sprinkle mixture and salt and pepper on both sides of chicken pieces.
2. Add olive oil to cast iron skillet over medium heat.
3. Brown chicken pieces 2 - 3 minutes on both sides
4. Place skillet in oven and finish cooking chicken until internal temperature reaches 150-155 degrees using an instant read thermometer.
5. Let chicken rest for 5 minutes. It will continue to cook as it rests.
6. Slice chicken then top with chopped cilantro and lime juice.
7. Serve with sautéed peppers and onions and heated fajitas.

Breakfast: Add greens to a smoothie or make a veggie frittata
Lunch: Large green salad or add veggies to a sandwich or to soup
Dinner: Make 2 side vegetables alongside your protein or have a pasta or stir fried rice dish with meat and veggies
