I love to bake and cook when I already have a fridge full of leftovers, read books when I should be cleaning, and buy craft supplies I probably won’t use.

Crazy times before going on vacation. Making 2 loaves of bread so there is plenty sourdough to hold over the kids until I can get back into the kitchen. Making sourdough discard chocolate chip cookies, because…does there need to be a reason for that? And watching the world cup. Woohoo. When I get back I will do this recipe for you, because everyone agreed that they were perfect.

Cut and double bake your biscotti. Now, when I am making these to wrap individually to share with people, I will cut them at an angle to get that traditional long biscotti biscuit. However, I was making these for the church volunteers, so I cut them straight across so that they would be shorter and I would get more biscotti out of each loaf. If you haven’t checked out the original recipe, I would encourage that and highly recommend the white chocolate, cranberry, orange one because that one has gotten great reviews from every group I have sent it to.

Biscotti Series.
Our inclusions for our biscotti base (previous reel) are chocolate chip biscotti and a white chocolate, cranberry, orange biscotti.
Some things you could change…
*You could add 1/2 cup of white chocolate chips to the chocolate chip biscotti to give it more flavor textures. So you would end up with 1 1/2 cups of chocolate chips.
* You could add some orange zest to the cranberry orange biscotti, again for more flavor textures.

Biscotti Base Recipe:
1/2 cup room temperature butter
3/4 cup, granulated sugar infused with vanilla beans if you have it if not, don’t worry about that.
2 eggs
2 tsp vanilla extract
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt

From this recipe, you can go anywhere your taste buds desire. Coming up, I make this into white chocolate, cranberry, orange biscotti. I also make this into chocolate chip biscotti

This is a video I shared to my main profile last year. I happened to be out at my blueberry bush picking blueberries the same time this chipmunk decided to come fill up his cheeks. This season, I have watched him all week going back and forth to my blueberries waiting for them to be ready to eat. I think he is as good excited as we are.

I don’t use sprays on my blueberry bushes. When I am picking blueberries, I have two buckets. One bucket for my ripe blueberries and one bucket for the ones I am throwing back in the woods. I get enough blueberries from my bushes that I don’t miss the ones I have to throw out and I like to think that the wildlife in my backyard likes it.

Tonight for dinner was Orange Chicken and rice. My boys wanted the recipe a little different from my original reel that was posted awhile ago, so here are the changes:
The chicken breast was cut into chunks then coated in kefir (that’s it, no egg). Then I mixed flour with seasoned salt, garlic powder, and paprika and tossed my kefir chicken in it. Pan fry in a little oil until golden brown. These nuggets tasted so good that the boys wanted them on the side instead of coated in the sauce.
THE SAUCE: My son wanted more orange flavor, so I doubled the marmalade.
1 cup of Orange Marmalade. 1/2 cup of honey bbq sauce. 1 TBSP soy sauce. 1/2 TBSP sesame seeds. Let it bubble in the pan until thicker.

This reel may not make much sense unless you go back and watch the original bagel recipe reel, but this was a fun, and delicious, one to make. I got a suggestion for cinnamon crunch bagels from someone at church, but then she wasn’t there, so my family and neighbors enjoyed these immensely. The cinnamon bits I got from King Arthur baking didn’t really work in my cinnamon rolls but were PERFECT in this recipe. I have an affiliation link in my bio if you are interested in those.
