I love a good snow day when I can be in the kitchen and just cook, bake, or try something new. Yesterday, I made homemade yogurt in my Instant Pot for the first time. Tooting my horn that is turned out. 2 containers of vanilla yogurt and one container of plain to turn into tzatziki sauce for gyro meatloaf tonight. Homemade granola courtesy of Madelyn. Why have I not done this sooner????? Slicing grape tomatoes individually takes forever!!!!! In the matter of seconds...done! Take 2 lids that are the same size. Place tomatoes on the bottom lid. Take your knife and slice through the middle. Easy and finished in no time!

I have made this recipe so many times for clients. It's healthy and great any time of the year, but especially now. A lot of good summertime veggies there.

Yesterday for Father's Day, I made shrimp boil foil packets. I had never made any sort of foil packet on the grill. I'm in love with all the meal opportunities, easy clean up, and simplicity. I got to thinking how great these would be for my clients. I do all the prep and they add to the grill for dinner. Done!

Kids are out of school for the Summer. They'll will be learning the kitchen basics for the next 3 months. Can't start them too young.

I will definitely need to try this. Great for my pantry items take along to cook dates.

Dinner meals aren't all I help my clients with. Sometimes I get clients that want food for breakfast time. Homemade granola is a quick breakfast for on the go. It's versitile too. Enjoy by itself, with yogurt, or diced apples.

Improvise. That is the word for me today. Cooking can keep you on your toes and sometimes you have to react accordingly. Today, I some how forgot cornmeal for making cornbread. Before I ran off to the store, I asked my client if she had any. She didn't, but suggested she had tortilla chips. "That'll work?" she asked. It was worth a shot and IT WORKED! The taste was slightly different, but still had that delicious buttery, cornbread taste. I love how cooking can be interchangeable.
