AIP brownie with “chocolate” frosting for breakfast. 20g of protein and very filling.
1 cup pumpkin puree
1/2 cup carob powder
1/2 cup coconut flour
1/2 cup coconut manna (melted)
12g collagen (I use @greatlakesgelatin )
1 tbsp gelatin (I used bovine from @greatlakesgelatin but agar agar would probably work too) - if not AIP just sub 1-2 eggs.
1/2 cup water
1 tsp baking soda
Combine all ingredients in a blender or mix by hand. If mixing by hand, mix the wet ingredients first, followed by dry. Sift the baking soda in, coconut flour and carob. Add the collagen. Place the gelatin in a bowl with water and stir. Let it sit for a few minutes before putting in the microwave for 30 seconds. This can also be done on the stove in which case you would stir the gelatin for 1-2 minutes. The gelatin acts as your egg.
Then transfer to a baking dish of your choice. Bake at 350 for 20-30 minutes or until a toothpick comes out clean.
Blend one medium sized cooked Japanese sweet potato (skin removed) in a food processor with 2-4 Tbsp carob powder. I added in 4 scoops or 28g of collagen for extra protein.
Put frosting on brownie and enjoy anytime. I like sweet breakfasts and this hit the spot. Though this isn’t sweet since I didn’t add in any additional sugars

1 Tbsp Olive Oil
1 small Onion, chopped
2 Celery Ribs (Stalks), diced
1 Bell Pepper, red or green
2 small Bay Leaves
2 sprigs Fresh Thyme, or 1/2 tsp dried
3 tsp Smoked Paprika
1/2 tsp Black Pepper
1 tsp Coarse Salt, or 3/4 tsp table salt
4 cloves Garlic, pressed or minced
1 Jalapeño Pepper, seeded and diced small
3 1/2 cups Chicken Broth, low sodium
2 tsp Balsamic Vinegar
1-2 slices Bacon, chopped
1 small Ham Hock (or meaty ham bone)
1 1/4 cups Black-Eyed Peas, dry*
2 cups Collard Greens, (optional) chopped in 2" pieces
Turn the pressure cooker on to the Sauté function. When the display reads Hot, add the oil.
Add the onion, celery, and bell pepper, and bay leaves. Cook, stirring occasionally, until the onion starts to turn translucent.
Add the thyme, smoked paprika, pepper, and salt. Stir.
Add the garlic and jalapeño. Cook for about 30 seconds, stirring frequently.
Add the broth, balsamic vinegar, bacon, and ham hock.
Stir in the black-eyed peas, and collard greens, if using.
Place the lid on the pressure cooker, locking it in place. Set the steam release knob to the Sealing position. Cancel the Sauté function.
Press the Pressure Cook/Manual button (or dial) and use the + or - button (or dial) to select 17 minutes (for firmer beans choose 14 minutes). High Pressure.
When the cooking cycle has ended and the pot beeps, let it sit undisturbed for 15 minutes (15 minute Natural Release), then turn the steam release knob to the Venting position to release the remaining steam/pressure.
When the pin in the lid drops down, open it and give the contents a stir. Discard bay leaves and ham hock (the ham hock won't be tender, it is for flavor, but if you can get some meat off of it, add it to the pot!).
Serve over rice for a Hoppin' John, or as is. Enjoy with cornbread to sop up that yummy broth! Happy New Year! Or, any time of year!

3 tbsp agave syrup
1 tsp vanilla extract**
1 tsp ARA 6®
1-2 tbsp Genoma Carob Extract

In a blender, pulse all of the ingredients together until combined.
Pour the milky mixture into popsicle moulds, yield will depend on the size of your moulds.
Freeze for a minimum of 3 hours until set. Enjoy!

I am craving for something sweet and healthy, post workout. Here are two recipes, I love.
ANTI-INFLAMMATORY SMOOTHIE RECIPE
• 1 scoop of protein powder
• 1 cup water
• ½ banana
• ¼ cup frozen raspberries
• 2 tbs. hemp seeds
• ¼ tsp. turmeric
• ½ tsp. cinnamon
• 3 stalks collard greens
• Add ice or water as desired
Blueberry Banana Bread (Gluten Free)
• 2 ripe bananas , mashed
• 1/2 cup Greek yogurt
• 2 oz butter , melted (4 tablespoons of butter)
• 3/4 cup sugar
• 1.5 teaspoons chia seeds
• 4 teaspoons hot boiling water
• 2 eggs
• 1 teaspoon vanilla extract
• 1 teaspoon baking soda
• 1 1/2 cups gluten-free flour , multi purpose, sifted (I use King Arthur flour)
• 1 cup blueberries
1. Preheat the oven to 350 F. Butter a 4x8 inch loaf pan. Line the bottom and two opposite sides of the pan with parchment paper, butter the parchment paper too. Note: lining the bottom and two sides of the pan with parchment paper ensures that the bread will not get stuck, especially if baking with gluten free flour.
2. In a small bowl, combine 1 and 1/2 teaspoons chia seeds with 4 teaspoons of hot boiling water - stir to mix and let the mixture sit, covered for about 10 minutes, until it forms a very thick gel-like slurry.
3. In a large bowl, using electric mixer, mix mashed bananas, Greek yogurt and melted butter. Add the sugar, eggs, vanilla, and chia seeds slurry - beat to combine, using electric mixer. Sprinkle the baking soda over the mixture and mix in, using the mixer. Add the flour last, in 3 separate batches, again using the mixer to combine each batch.
4. Carefully fold in whole blueberries, using spatula, into the batter and distribute them evenly through the batter.
5. Pour the batter in the prepared pan. Bake for about 1 hour. Check the doneness by inserting a toothpick in the center of the bread as well as inserting it along the sides of the bread. The toothpick should come out clean when inserted in the center - without liquid batter stuck to it.
6. Cool the blueberry banana bread in the pan on a rack for 40 or 50 minutes before releasing it from the pan.
I am trying this without the peanut butter sauce.

Easy 10 Minute Chocolate Muffin (grain-free, gluten-free, dairy free) Serves 1-2
Makes 3-4 medium muffins
3 pastured eggs
1 tbsp coconut oil (melted)
2 Tbsp of raw cocoa powder
2 tbsp of honey OR 10-15 drops of stevia
1 tsp cinnamon (optional)
1/2 tsp nutmeg (optional)
1 tsp vanilla extract (gluten free)
1/2 tsp baking soda
Heat up the oven to 350 degrees.
Mix all the ingredients together in a mixing bowl with a whisk.
Pour into a silicone muffin cup holder or other oven safe holder.
Bake for 10-15 minutes or until set.
Let them cool for 5 minutes then pop out of silicone.
