🍉It is nearly the July 4th weekend, and finding trucks on the side of the road, farmers markets, and stores selling truckloads of watermelons is a common sight. On the Fourth of July, a bite of watermelon somehow tastes sweeter. It is a time machine back to barefoot afternoons, popsicles, and swings. Nowadays, we may want more than just slices of watermelon to enjoy. Here are five creative things to do with our favorite fruit of the summer:

1. Watermelon pizza. Top with berries, mint, and fruit-flavored cream cheese for a low-carb snack.
2. Watermelon cake. Cut off the rind and “frost” the melon with whipped topping. Garnish with fruit and/or sprinkles. Think how delighted your guests will be when they cut into what they think is a decadent, delicious cake and discover fruit!
4. Punch bowl. Hollow out the rind and fill it with your favorite drink. Cut the fruit into squares and make melon ice cubes. Why? Why not?
5. Watermelon tacos. Cut up melon and other fruit and put them in a taco shell. Drizzle with yogurt. Eat as a healthy treat! Then go out for "real" tacos.

Designing for Dementia 12/06/2025

June is Alzheimer’s and Brain Awareness Month. About 10% of the 65 and older population in the U.S. has dementia, including about 41% of assisted living residents. When designing for senior living communities, features and amenities must promote brain health, comfort, calmness, and well-being. This includes biophilic elements such as plants and natural light, colors proven to evoke calm and comfort, opportunities for safe activity such as secure but aesthetically pleasing walking paths, use of tactile, auditory, and olfactory elements such as interactive artwork, courtyards with fragrant plants (non-poisonous), and aviaries or fish tanks. There is much we can do to promote comfort, well-being, engagement, and purpose in residents who have dementia or some cognitive impairment.
