Said it before and I’ll say it again- this is the best salad year round. 🍎🍠🥗 Inspired by the Harvest Bowl, we’ve adapted this to our tastes to be the easiest, most filling lunch or dinner!

Tips in stories ❣️

Kale
1 sweet potato + cinnamon
Chicken breast
Red apple
Pumpkin seeds
Optional: goat cheese (I didn’t have any today!)

Olive oil
Apple cider vinegar
Dijon mustard
Salt + pepper

Step 1: potatoes, dice, EVOO, salt/pepper, cinnamon, roast @ 400° 15-20 mins
Step 2: pound chicken to 1/2 inch, medium high heat on a skillet for 7~ min each side until internal temp is 165°
Step 3: massage kale with dressing then add other ingredients diced on top!

This orange “chicken” was everything 👏🏻 and was vegan!! Not a vegan person but sometimes just want a meal without meat! Highly recommend and it’s husband approved which was huge for a vegan meal lol (he actually said it’s something he wants me to make again🤷🏼‍♀️)⁣

*few changes I made*⁣
• I used half canola and half coconut oil to fry (a little extra flavor)
• I used full soy sauce instead of an alternative soy sauce - I feel like it needed the full saltiness.⁣
• I used sugar-free maple syrup ⁣

What’s your cleanup routine?⁣
1. Loads the dishwasher immediately after cooking. ⁣⁣
2. Convinces yourself you’ll do them in the morning. ⁣⁣
3. Only uses “one-pot” recipes to avoid the cleanup. ⁣⁣
4. Makes kitchen clean up a “teamwork” activity.

~Recipe Below~ Heard it was from 🥜🌰 Packed this repurposed jar of homemade trail mix this morning to add to yogurt at the office!

Recipe inspired by &

3 cups rolled oats
1/2 can or 1/2 cup pumpkin puree
1/4 cup melted coconut oil
1 1/4 cups mixed nuts (almonds, flax seeds, pumpkin seeds)
1/4 cup maple syrup
1 tbsp cinnamon
1 tbsp chia seeds

Combine pumpkin, syrup, and coconut oil
Mix in oats and mixed nuts
Spread out onto baking sheet (parchment paper, no because we want it crispy!)
Drizzle syrup, cinnamon, and chia seeds, stirring to coat evenly
Bake for 10 min, *remove from oven and place on top of your stove (don’t want to risk spilling onto oven floor) and stir it around.
Return to oven for 10 min at a time, stirring in between, until browned. Usually 30-40 mins
Store it and use on smoothies, smoothie bowls, yogurt, or as grab and go trail mix!

An Anti-Salad suuuuper easy lunch idea! 🧀🍯 Threw leftovers of husbands daily turkey salad ingreds in a bowl. Wish I had fruit to fill the bottom portion, but I didn’t have any today ;) ¯\_(ツ)_/¯ 🍪 swipe for a surprise!

Honeycrisp salad 🍎 🍂 Still thinking about how good this was tonight ~~
- one honeycrisp or favorite apple, diced
- shaved almonds
- diced dates
- dressing: 1 part olive oil, 1 part balsamic, splash of lime or lemon juice, salt, pepper
- chicken (not a necessity!)
- lettuce mix (I have a spring mix)
