Jamaican Inspired Street Tacos Recipe
Serves: 4-6

Ingredients:

1 ½ lbs chicken thighs, boneless and skinless
2 tablespoons Dwyer Spices All-Purpose Seasoning
1 tablespoon vegetable oil
12 small corn tortillas
1 ripe mango, diced
1 small red onion, finely chopped
1 jalapeño, deseeded and finely chopped
Juice of 1 lime
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
Optional garnishes: lime wedges, additional cilantro, sliced avocado
Marinade:

2 tablespoons Dwyer Spices All-Purpose Seasoning
1 tablespoon vegetable oil
Juice of 1 lime
Instructions:

Prepare the Marinade:
In a bowl, combine the Dwyer Spices All-Purpose Seasoning, vegetable oil, and lime juice. Mix well.

Add the chicken thighs to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

Cook the Chicken:
Heat a grill pan or skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked and slightly charred. Remove from heat and let rest for a few minutes before chopping into bite-sized pieces.

Prepare the Mango Salsa:
In a bowl, combine the diced mango, red onion, jalapeño, lime juice, and chopped cilantro. Season with salt and pepper to taste. Stir well to combine.

Warm the Tortillas:
Heat the tortillas on a skillet over medium heat for about 30 seconds on each side, or until they are warm and pliable.

Assemble the Tacos:
Place a few pieces of the cooked chicken on each tortilla. Top with a generous spoonful of mango salsa.

Jamaican Stewed Beef Recipe
Serves: 4-6

Ingredients:

2 lbs beef chuck, cut into 1-inch cubes
2 tablespoons vegetable oil
1 large onion, chopped
4 cloves garlic, minced
1 inch ginger, finely chopped
1 scotch bonnet pepper, deseeded and minced (adjust to heat preference)
1 large carrot, sliced
1 bell pepper (any color), chopped
1 can (14.5 oz) diced tomatoes
3 cups beef broth
1 tablespoon Dwyer Spices All-Purpose Seasoning
1 teaspoon dried thyme
2 bay leaves
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
2 large potatoes, peeled and cubed
Salt and pepper to taste
Fresh thyme or parsley, chopped (for garnish)
Instructions:

Brown the Beef:

Heat the vegetable oil in a large pot over medium-high heat.
Season the beef cubes with salt and pepper, then add to the pot. Cook until browned on all sides. Remove the beef and set aside.
Sauté Vegetables:

In the same pot, add the onion, garlic, ginger, and scotch bonnet pepper. Sauté until the onions are translucent and fragrant.
Add the carrot and bell pepper, cooking for an additional 5 minutes until slightly softened.
Stew the Beef:

Return the beef to the pot. Stir in the diced tomatoes, beef broth, Dwyer Spices All-Purpose Seasoning, dried thyme, bay leaves, soy sauce, and Worcestershire sauce.
Bring the mixture to a boil, then reduce the heat to low and cover. Let simmer for 1.5 hours, stirring occasionally.
Add Potatoes:

Add the cubed potatoes to the pot and continue to simmer, covered, for another 30 minutes, or until the potatoes are tender and the beef is fall-apart soft.

Remove the bay leaves and adjust seasoning with salt and pepper if needed.

25th Street Jerk Pork Ribs Recipe
Serves: 3-4

Ingredients:

2 tablespoons olive oil
1 tablespoon sugar
2 tablespoons red wine or red wine vinegar
½ cup Dwyer Jamaican Jerk Rub
2 tablespoons soy sauce
3 ½ - 4 pounds pork ribs (baby back recommended)
¼ cup orange juice
Black pepper to taste (optional for extra heat)
Instructions:

Marinate the Ribs:

In a large container, combine olive oil, sugar, red wine (or vinegar), Dwyer Jamaican Jerk Rub, soy sauce, and orange juice. Mix well.
Place the ribs in the container and turn to coat them lightly with the marinade.
Refrigerate and let marinate for 3-4 hours, ensuring there's enough marinade left for basting the ribs on the grill.
Prepare the Grill:

Prepare a low fire in a charcoal grill. Once the coals are ready, rake them to one side.
Place a drip pan next to the charcoal to catch drippings and position the ribs over the drip pan for indirect grilling.
Cover the grill and cook on low and slow heat for about 4 hours, or until tender. Turn the ribs and brush them frequently with the remaining marinade. If you desire more heat, add black pepper to the marinade.
Maintain the fire at a steady 225 degrees, adding more coals as necessary to keep the temperature even.
Finishing Touches:

Born in Kingston, Jamaica, in 1805, Mary Seacole broke barriers as a nurse and entrepreneur during the Crimean War. Facing racial prejudice and being denied the opportunity to serve in an official capacity, she funded her own journey to the front lines. There, she established the "British Hotel," a sanctuary for wounded soldiers, earning her the affectionate nickname "Mother Seacole."

Her autobiography, "The Wonderful Adventures of Mrs. Seacole in Many Lands," is one of the first by a mixed-race woman in Britain, offering insight into her incredible journey and the challenges she overcame.

In 2004, Mary Seacole was voted the greatest black Briton, acknowledging her invaluable contributions to nursing and healthcare. Today, we celebrate her as a symbol of courage and dedication, a woman who paved the way for future generations with her unyielding spirit and heart of gold.
