Merry Christmas! My holiday cookie platter was a little smaller than usual this year, but no less delicious! I made the now famous Mint Chocolate Chip Cookies from Christmas Cookie Collection, and yes, they absolutely live up to the hype. Perfect amount of mint, and I love the idea of using olive oil to temper the sweetness of the white chocolate. 10/10. And aren’t they fun to look at?

I also made the Dark and Stormy cookies from the same recipe collection. Super unique and delicious. Hopefully I’ll be able to grab some photos of the before they disappear!

birthday wish this year was a chocolate cake 😍 So here I am making birthday dreams come true, with a three tier chocolate fudge cake with a peanut butter and chocolate ganache filling.

Still reaping the benefits of the online baking course I took a few years ago with the talented where we learned her techniques for building pretty cakes.

Dark Chocolate Chunk and Strawberry Cookies

These yummy guys are a tale of: When you buy the wrong ingredients and use the wrong amount of butter, but still end up with something delicious 😂

These were meant to be White Chocolate Raspberry Cookies, but I accidentally bought a bar white chocolate that had a filling 😧and freeze dried strawberries instead of raspberries. 🫣And put in 18TBSP of browned butter instead of 14 🫠(I’m really bad at math) which I didn’t realize until I was stirring it all together…

But…I had dark chocolate in the pantry and added a couple of tablespoons of flour and extra fillings, baked them straight from the refrigerator instead of letting the dough come to room temp, and somehow it all worked out, and I still bring them to the Labor Day party. Phew. 😅

Blood Orange Olive Oil Cake
Maybe not the most traditional 4th of July dessert but it sure was delicious!

The recipe is from my Europa Table membership. (Not an ad, I’m just a fan.) It’s a quarterly subscription box from a local winery . They send key ingredients like blood orange olive oil, dried blood oranges, even a springform pan and a recipe booklet. This one was so good and so easy! Two bowls. Whisk together wet ingredients, whisk in dry ingredients and bake!
